EASY BAKED SWEDISH MEATBALLS
This is going to sound so cliché, but the first time I remember trying Swedish meatballs was at IKEA.

- For the meatballs:Preheat oven to 400°F (205°C).Place all of the ingredients for the meatballs in a large bowl. Using your hands, mix it all together thoroughly. Just make sure to not over-mix it or the meatballs could get tough.Roll the meat into 1 1/2-inch balls and place them on a baking sheet, making sure they don't touch. You may need to use more than one pan. You should get about 46 meatballs.Bake in preheated oven for 15-20 minutes, or until cooked through.For the gravy:Meanwhile, as the meatballs are baking, make the gravy. Melt the butter in a large pot over medium heat. Whisk in the flour, salt and pepper. Cook for 2 minutes, whisking frequently. Pour in 1 cup of milk while whisking, then pour in the remaining milk. Whisk until smooth. Cook, stirring frequently, until mixture thickens and comes to a boil. Boil and whisk for 1 minutes. Remove from heat.Add meatballs and stir to coat in the gravy. Garnish with parsley if desired. Serve over mashed potatoes with lingonberry sauce off to the side.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish lightly with cooking spray.
- Heat olive oil in a small skillet over medium heat. Add onion and garlic; cook and stir until softened, about 5 minutes. Let cool briefly, about 5 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

- Start with your chicken meatballs. Preheat your oven to 400 degrees and spray a baking pan with non-stick spray. Once done, add all ingredients to a large mixing bowl. Using your hands, combine well. Using a spoon or just eyeballing it, roll about 20 meatballs and place on your prepared baking sheet. Bake for 25 - 30 minutes.
- While your meatballs are baking, make your sauce. To a large saucepan, melt butter over medium high heat and once melted, whisk in flour. Continue to cook flour while whisking it for the next minute before pouring in beef stock. Whisk to remove any flour lumps. Add in seasonings, soy sauce, Dijon mustard, Parmesan cheese, sour cream and bring gravy sauce to a low boil before reducing heat to low to simmer.
- Once your sauce is simmering, set a large pot of salted water to boil. Cook your noodles according to the packaging instructions.
- When your chicken meatballs are cooked, move them from the baking pan right into the gravy sauce and let simmer for about five minutes. Serve your meatballs over you noodles and garnish with a bit of fresh parsley.

- In a bowl combine the panko crumbs with milk. Add remaining ingredients for the meatballs and mix well. Shape into 24 meatballs.
- Add 2 Tbsp oil to a large skillet over medium heat. Once hot, cook meatballs in 2 batches until golden brown and cooked through (6-7 minutes), turning as needed. Add more oil as needed. Remove from the skillet and cover to keep warm.
- In the same skillet, melt the butter. Quickly whisk in the flour and cook until golden.
- Stir in the broth, heavy whipping cream, Dijon and season with salt and pepper to taste. Bring the sauce to a simmer and cook it thickens.
- Add back the meatballs and toss in the gravy sauce. Cook until meatballs are heated through.

- Soak bread in milk.
- Add the following to soaked bread:.
- - Eggs, slightly beaten.
- - Ground beef.
- - Onion.
- - Sugar.
- - Spices (except dill weed).
- Shape into 1" balls. Brown on all sides in skillet (or bake in 400 degree oven for 20 min.).
- Remove meatballs to 2 quart casserole.
- In skillet, or saucepan:.
- Add 5 Tbsp flour (or cornstarch) to meat drippings, then add 1 can Consomme and 1 can water.
- Note: Shake with 1 soup can of water with flour (or cornstarch) if meatballs were baked. Then add to Consomme.
- Cook, stirring gravy until thick and smooth.
- Add 1 cup light cream and 1 tsp dillweed, and stir until blended.
- Add to meatballs.
- Bake, covered for 30 minutes at 400 degrees.

Put it back into the oven and cook until bubbling at the edges, about 5 minutes. Stir. Cook until thick and hot, 4-5 minutes more. Transfer to a serving bowl.
