- In a bowl, peel and mash three Chiquita bananas with a fork.
- In a large bowl, whisk the melted butter with 2/3 cup brown sugar until well combined. Add eggs, mashed Chiquita bananas and vanilla and whisk until combined.
- Stir lightly with a spatula the self-raising flour and salt to the batter until no streaks of flour remain.
- Spread an even layer of the batter into the prepared loaf pan.
- Peel and slice the last Chiquita banana. Top the banana bread with the slices and sprinkle with lightbrown sugar. Bake for approx. 40-60 minutes.
