Easy Vegan Broccoli Soup (Low Fat) image

A deliciously easy vegan broccoli soup that's silky smooth and low fat. Only four ingredients, quick cook time and loads of flavor to make a warming bowl of goodness.

750 grams Broccoli (chopped small)
3 medium Potatoes (peeled and chopped small)
1 teaspoon Black Pepper (freshly cracked)
5 Cups Vegetable stock (or enough to just cover veggies)

Steps:

  • In a tall pot, over hight heat, boil potatoes, vegetable stock for 5 minutes.
  • Add broccoli and pepper, cook for another 10 minutes. Turn off heat.
  • Allow pot to stand for 10 minutes. Then pour contents into a blender and blend until completely smooth. Serve warm.

This is a healthy and simple soup I whipped up for the Vitamix®. Can easily be made vegetarian or vegan by substituting vegetable broth and/or non-dairy milk. You can reserve some of the microwaved broccoli and potatoes and add them after blending if you like more substance to your soup. Enjoy!

1 ½ teaspoons olive oil
½ small onion, diced
2 potatoes, diced
1 head broccoli, cut into florets
1 cup milk
1 cup chicken broth
⅛ teaspoon ground black pepper
⅛ teaspoon sea salt
⅛ teaspoon ground ginger
⅛ teaspoon ground thyme

Steps:

  • Heat olive oil in a skillet over medium heat; saute onion until translucent, 5 to 10 minutes.
  • Spread potatoes and broccoli onto a microwave-safe plate. Cook in microwave until tender, 4 to 5 minutes.
  • Place onion, potatoes, broccoli, milk, chicken broth, pepper, salt, ginger, and thyme in the Vitamix® or blender. Start on variable 1, slowly increase to variable 10, and end on high for 4 to 5 minutes. Serve hot.

1 cup raw cashews
5 cups vegetable broth, divided
2 Yukon Gold potatoes, cut into 1/2-inch cubes
1 onion, finely chopped
4 ½ cups coarsely chopped broccoli
1 teaspoon dried basil
1 teaspoon fine sea salt
¼ teaspoon freshly ground black pepper

Steps:

  • Blend cashews and 1 cup vegetable broth in a blender until smooth, about 1 minute.
  • Pour the remaining 4 cups vegetable broth into a large pot; add potatoes and onion. Bring to a simmer, cover, and cook for 5 minutes. Stir in broccoli and basil; return to a simmer. Cover and cook until potatoes are tender, about 10 minutes.
  • Stir cashew mixture into soup; add salt and black pepper. Bring to a simmer and immediately remove from heat. Transfer about half the soup to a blender; blend until smooth. Return blended soup to pot and stir well. Serve immediately.

This is an idea I got based on a Gordon Ramsey recipe. It's a little fiddlier than I usually like - pouring water in - pouring water out - but even with all that, it's still a terrifically easy, completely clean recipe.

300 g broccoli, cut into florets (about 2 heads)
1 liter water, for steaming
salt

Steps:

  • Place the water in the TM bowl. Place the broccoli florets in the Varoma steamer.
  • Steam broccoli for 7 minutes/Varoma/speed 1 - or until bright brilliant green and just tender enough to cut.
  • Pour the water used for steaming into a separate bowl.
  • Place the cooked broccoli into the TM bowl. Add some of the cooking water back to the TM bowl - perhaps 350 grams to start. Add in salt to taste.
  • Blitz by gradually raising the speed from 1-10. Check the consistency, if the soup seems right, go ahead and serve. If it seems a bit too thick - add in more of the cooking water and blitz again.
