Use this delicious blackened seasoning to cook fish, meat, or poultry by searing it over very high heat in a black iron skillet. It's a Cajun classic.

1 heaping tablespoon paprika
2 teaspoons salt
1 heaping teaspoon garlic powder
1 heaping teaspoon onion powder
1/4 to 1/2 teaspoon ground cayenne pepper
2 teaspoons black pepper
1/2 teaspoon dried leaf thyme
1/2 teaspoon dried leaf oregano

Steps:

  • Gather the ingredients.
  • Mix the ingredients well and funnel into a shaker.
  • Seal well and store in a cool, dry place.
  • Place a large cast-iron skillet over high heat until it is very hot, about 8 to 10 minutes.
  • Clarify about 1 cup of butter (or use melted ghee); put about 1/3 cup of the butter in a cup and set the remaining butter aside for serving. Add a few tablespoons of the butter in the hot pan.
  • Coat the redfish fillets liberally with the seasoning blend. Season as evenly as possible.
  • Arrange the fish fillets in the skillet and drizzle each fillet with about 1 teaspoon of the remaining melted butter. Cook the fillets for about 2 minutes (uncovered) until charred looking. Turn the fillets and add more butter to the pan. Cook for about 2 more minutes, drizzling with a little more butter. Serve the fish hot with some melted butter on the side for each guest.

Make this easy and delicious blackened cajun grilled fish with homemade cajun seasonings. This is an easy recipe you don't want to miss!

4 skinless firm white fish fillets (such as tilapia, mahi-mahi, snapper, cod, bream, or pollock)
2 Tbsp melted butter (for cooking the fish. You can use healthier cooking oil like avocado oil for example)
1 Tbsp paprika powder
1 tsp garlic powder
1 tsp onion powder
1 tsp thyme powder
1 tsp cayenne pepper powder (add more if you want it spicier)
1 tsp salt
1 tsp freshly ground black pepper
2 Tbsp melted butter (or use healthier cooking oil like avocado oil for example)
1 lime or lemon
Fresh cilantro leaves or parsley

Steps:

  • Mix all the cajun seasoning ingredients in a bowl and set aside
  • Pat each fish fillet dry with an absorbent paper towel
  • Using your hands, smear the rub all over both sides of the fish fillets evenly. Let them marinade for at least 30 minutes
  • Put a nonstick frying pan or grill pan over a high heat and let it get nice and hot. Pour 2 Tbsp of melted butter on the pan. Place the fish fillet on the pan and cook/grill for about 3-4 minutes on each side (depending on how thick your fish fillet is). The seasonings will start to blacken nicely too. The fish will flake easily when it's fully cooked. Remove from the pan to serving platter
  • Garnish with lime/lemon slices and some fresh herb like cilantro leaves or parsley leaves

This recipe calls for trout, but catfish or red snapper would be equally good. Be sure to have a well-ventilated kitchen!

1 tablespoon paprika
2 teaspoons dry mustard
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon black pepper
1 teaspoon white pepper
1 teaspoon dried thyme
1 teaspoon salt
¾ cup unsalted butter, melted
6 (4 ounce) fillets trout
¼ cup unsalted butter, melted

Steps:

  • In a small bowl, mix together paprika, dry mustard, cayenne pepper, cumin, black pepper, white pepper, thyme and salt; set aside. Heat a heavy cast iron pan on high heat until extremely hot, about 10 minutes.
  • Pour 3/4 cup melted butter into a shallow dish. Dip each fillet into butter, turning once to coat both sides. Sprinkle both sides of fillets with spice mixture, and gently pat mixture onto fish.
  • Place fillets into hot pan without crowding. Carefully pour about 1 teaspoon melted butter over each fillet. Cook until fish has a charred appearance, about 2 minutes. Turn fillets, spoon 1 teaspoon melted butter over each, and cook until charred. Repeat with remaining fish.

This is a recipe that I obtained from a very good Cajun friend who is a native of Lafayette, Louisiana. His family adopted me (friendly) many years ago and we have swapped Cajun and Creole recipes through the years.

1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried parsley
1 teaspoon ground cayenne pepper
1 teaspoon kosher salt
½ teaspoon dried oregano
½ teaspoon dried thyme
4 (4 ounce) catfish fillets, skinned
¾ cup unsalted butter

Steps:

  • In a shallow bowl, mix together the black pepper, garlic powder, onion powder, paprika, parsley, cayenne pepper, kosher salt, oregano, and thyme until thoroughly combined. Press the catfish fillets into the spice mixture to thoroughly coat.
  • Arrange a portable heat source outdoors, such as a butane burner or side burner of a gas grill. Melt butter in a glass or metal bowl. Light the burner, and place a large cast-iron skillet onto the burner over high heat. Pour about 1/4 cup of melted butter into the skillet; set remaining 1/2 cup of butter aside.
  • When the butter in the skillet is smoking hot, lay the catfish fillets into the skillet. Cook until the spices are burned onto the fillets and the catfish is opaque and flaky inside, about 3 minutes per side. Don't breathe smoke from burning spices. To serve, pour remaining 1/2 cup of butter over the catfish.
