NINE-LAYER CHEESEBURGER DIP
Grab a plate, scoop and then dip. This is nine layers of deliciousness that really delivers on its namesake. Your partygoers won't believe how much it tastes like the real thing! Make the day before and refrigerate to save time on game day.

- Preheat the broiler. Open the hamburger buns and arrange on a baking sheet. Brush the buns all over with 1 tablespoon of the mayonnaise. Toast until golden on both sides, 1 to 2 minutes per side. Cut into very small pieces and set aside.
- Combine the cheese, 1/2 cup mayonnaise and a pinch of salt in a food processor and process until very smooth. Transfer to a bowl, cover and refrigerate until ready to use.
- Whisk the remaining 1/2 cup mayonnaise, the ketchup and mustard in a bowl for the sauce, cover and refrigerate until ready for use.
- Arrange the bacon in a large nonstick skillet (do in batches if necessary) and heat over medium heat. Cook until golden brown and crispy, 4 to 5 minutes per side. Remove, let cool slightly and chop into small pieces.
- Wipe out the skillet. Heat the oil in the skillet over medium-high heat. Add one-third of the onion and cook, stirring frequently, until soft and just beginning to brown, about 4 minutes. Add the ground beef, 3/4 teaspoon salt and a few grinds of pepper. Cook, stirring and breaking up into smaller pieces, until browned and cooked through, about 4 minutes. Stir in a 1/3 cup of the prepared ketchup sauce and cool the beef mixture to room temperature.
- Let the cheese mixture soften at room temperature, about 30 minutes, before building the dip. Layer the dip in a medium, straight-sided 3-quart clear glass trifle bowl or your favorite serving dish. Spread out the cheese mixture and then top, in even layers, with the buns, tomatoes, beef, the remaining ketchup sauce, the pickles, the remaining onions and the bacon.
- Wrap and refrigerate until chilled, at least 1 hour and up to overnight. Top with the shredded lettuce right before serving. Serve with chips for dipping.
CHEESEBURGER DIP
My little cousin, Eric, inspired me to come up with this dip. His favorite food is cheeseburgers, and since I couldn't make cheeseburgers for his family party, I turned his fave dish into a easy-to-make dip! It's a simple recipe that can be expanded on with a variety of ingredients. Serve dip with tortilla chips (scoop-style chips are easiest), potato chips, or thin slices of baguette bread.

- Heat olive oil in a skillet over medium heat. Cook and stir sweet onion and garlic in the hot oil until the onion is tender, about 5 minutes. Break ground beef into the skillet; cook and stir until browned and crumbly, 5 to 7 minutes more.
- Reduce heat to medium-low. Stir chili sauce, Worcestershire sauce, garlic powder, chili powder, salt, and pepper into the beef mixture. Pour cheese spread into the skillet; cook and stir until the cheese spread is melted evenly through the beef mixture, 3 to 5 minutes. Transfer beef mixture to a serving dish.
- Layer lettuce, tomatoes, and pickles atop the beef mixture to serve.

- Preheat the oven to broil.
- Heat a medium cast-iron skillet over medium heat and add the oil. When the oil is hot, add the ground beef and cook, crumbling it with a wooden spoon, until beginning to brown, about 3 minutes. Add the onion and cook until the onion is softened and the beef is cooked through, 7 to 8 minutes. Clear an empty spot in the middle of the skillet, add the tomato paste and toast the paste for a minute. Sprinkle with the garlic powder and stir to coat the meat. Stir in the salsa con queso and half-and-half. Bring to a simmer and cook, stirring, until smooth, about 1 minute. Sprinkle the middle of the dip with the Cheddar, leaving a small border around the edge without cheese. Broil until the top is bubbly and browned in places, 1 to 2 minutes.
- Mix together the mayonnaise, relish and ketchup in a small bowl. Season with salt and pepper.
- Top the dip with a sprinkle of onions and pickle chips, a mound of lettuce and tomatoes and drizzles of the mayo-relish sauce, ketchup and mustard. Serve with tortilla chips for dipping.

- Set oven to broil.
- Brown ground beef, drain.
- In a 9x9 baking pan, spread ground beef evenly in the bottom.
- Spoon in salsa, making sure to cover all of ground beef.
- Add sour cream smoothing out over salsa (it may mix with salsa giving a pinkish hue, but this is ok).
- Slice velveeta in thin squares and layer over the top of salsa in rows.
- Place in oven to broil until cheese melts. Make sure you watch the top so that the cheese doesn't burn.
- ( You can also put it in on 350, but it takes much longer).
- Enjoy with Tostitos Scoops!
