Our slimming-friendly Easy Chicken Curry really is super simple, and tastes so good - the perfect meal whether you're counting calories or following a plan like Weight Watchers!

12 chicken thighs (skin removed)
1 onion (sliced)
2 cloves garlic (sliced thinly)
¼ tsp ground cloves
¼ tsp ground cinnamon
4 tbs medium curry powder
500 ml water

Steps:

  • Cut the meat off from either side of the chicken thigh bones and place the meat and bone into a large saucepan
  • Add the onion, garlic and spices and mix well to coat. Add the water and stir
  • Cook on a medium heat with a lid on, stirring occasionally for 1 hour
  • Remove the lid after the time and let the sauce reduce and thicken for the last 30 minutes
  • Serve with rice and your choice of garnish (suggestions above!)

  • Fry the ginger, garlic and onion until softened, add a bit of the stock if they start to stick to pan. Tip in the chicken and cook until lightly browned, about 5 mins, then add in the curry powder and cook for 1 min further.
  • Pour over the stock and tomato paste and simmer for about 20 mins until the chicken is cooked through. Make sure it is bubbling so that the liquid reduces down.
  • Add the yoghurt and coconut extract to a jug and stir in a couple of spoonfuls of the liquid from the curry.

  • Heat oil in a large saucepan over medium heat. Cook chicken in 2 batches, stirring occasionally, for 4 minutes each batch or until golden brown. Set aside.
  • Cook onion in same pan, stirring occasionally, for 5 minutes or until very soft and golden brown. Add garlic, ginger, coriander and spices and cook, stirring, for 30 seconds.
  • Return chicken to pan. Stir in tomatoes, ¾ cup (180ml) water and coconut milk. Add pumpkin and cauliflower. Cover and bring to a simmer. Cook, partially covered, for 15 minutes or until vegetables are tender and chicken is cooked through.
  • Stir in peas and cook for 2 minutes or until tender. Sprinkle with coriander leaves. Serve with lime wedges.
