EASY CHICKEN CURRY | SLIMMING & WEIGHT WATCHERS FRIENDLY
Steps:
- Cut the meat off from either side of the chicken thigh bones and place the meat and bone into a large saucepan
- Add the onion, garlic and spices and mix well to coat. Add the water and stir
- Cook on a medium heat with a lid on, stirring occasionally for 1 hour
- Remove the lid after the time and let the sauce reduce and thicken for the last 30 minutes
- Serve with rice and your choice of garnish (suggestions above!)

- Fry the ginger, garlic and onion until softened, add a bit of the stock if they start to stick to pan. Tip in the chicken and cook until lightly browned, about 5 mins, then add in the curry powder and cook for 1 min further.
- Pour over the stock and tomato paste and simmer for about 20 mins until the chicken is cooked through. Make sure it is bubbling so that the liquid reduces down.
- Add the yoghurt and coconut extract to a jug and stir in a couple of spoonfuls of the liquid from the curry.

- Return chicken to pan. Stir in tomatoes, ¾ cup (180ml) water and coconut milk. Add pumpkin and cauliflower. Cover and bring to a simmer. Cook, partially covered, for 15 minutes or until vegetables are tender and chicken is cooked through.
- Stir in peas and cook for 2 minutes or until tender. Sprinkle with coriander leaves. Serve with lime wedges.
