Easy Chicken Stir-Fry | Chef John's Cooking Class image

Fragrant tender and juicy chicken, the aroma will fill your kitchen. chefs key points: add a touch of sugar not to make it sweet but to enhance flavors marinate the chicken first before you stir fry, and the next tip is to fry the ginger with the chicken thoroughly to infuse and get the best of flavors.

Number Of Ingredients 15

1 lb. Boneless skinless chicken thighs
Marinade
1/8 tsp. Black pepper
1/8 tsp. Salt
1 tbsp. Shaoxing cooking wine
Cook The Chicken
1 tbsp. Cooking oil
5 slices Ginger, sliced
5 stalks Green onions cut Into 1/2 inch pieces.
1 tbsp. Shaoxing cooking wine
1 cup Chicken broth
2 small Mini sweet bell peppers
1 tbsp. Light soy sauce
1 tbsp. Sugar
2 tbsp. Green onion, chopped

Steps:

  • Pond the chicken meat with the heel of a knife to tenderize, (this is to make the chicken tastier and not to curl up during cooking). Then cut into chunky pieces. set aside.
  • In a bowl combine chicken with 【Marinade】(Shaoxing cooking wine can be substituted with beer).
  • Mix thoroughly, marinate for 10 minutes.
  • In a large cooking pan over medium-low heat, add cooking oil, and ginger slices. Fry until golden and fragrant. (Cook the ginger slices and chicken thoroughly until they are fragrant therefore remove the gamey taste in chicken.)
  • Then add marinated chicken, fry for about 3-5 minutes until golden.
  • Continue adding green onion, Shaoxing cooking wine.
  • Add chicken broth, mini bell pepper circles, light soy sauce, and sugar, stir fry for 3-5 minutes until the sauce is thickened.
  • Sprinkle minced green onion on top at the end. Then plating.
  • Enjoy!
