- In a microwave, melt chocolate; stir until smooth. Gradually stir in cream until blended. Stir in extract. Cool to room temperature, stirring occasionally. Refrigerate until firm. Shape into 3/4-in. balls. Roll in sugar.

CHOCOLATE-ORANGE TRUFFLES
Infuse heavy cream with orange zest, then mix it with chocolate for truffles that deliver a burst of citrus flavor.

Steps:
- Bring about 1 inch of water to a very slow simmer in a medium saucepan. Put the chocolate in a medium heat-safe bowl that can sit on top of the pan without touching the water. Put the bowl over the water and let the chocolate melt, stirring occasionally until smooth. Remove from the heat.
- Meanwhile, bring the heavy cream, honey and half of the orange zest to a simmer in a small saucepan over medium heat, stirring occasionally to dissolve the honey. Strain the cream mixture through a fine-mesh sieve into a small bowl and then gradually whisk into the chocolate until smooth and shiny. Whisk in the butter until melted. Cover the bowl with plastic wrap and set aside in a cool spot until slightly firm, about 1 hour.
- Line a baking sheet with parchment paper. Rub together the sugar and remaining orange zest in a small bowl until combined. Transfer the truffle mixture to a piping bag or resealable bag fitted with a plain 1/4-inch tip. Holding the bag about 1/4-inch over the baking sheet, pipe 3/4-inch truffles. Sprinkle with the orange sugar. Refrigerate until set, about 15 minutes.

- Place chocolate in large heatproof bowl. Set aside. Bring cream just to boil in small saucepan on medium heat. Pour over chocolate in bowl. Let stand 2 minutes. Stir until chocolate is melted. Add orange extract and orange peel; stir until well blended.
- Refrigerate 1 hour or until truffle mixture is firm enough to handle.
- Shape truffle mixture into 1-inch balls with a small (1-inch) cookie scoop or melon baller. Place on wax paper-lined tray. Roll truffles into round balls with hands. (If truffle mixture softens, return to refrigerator for 15 to 20 minutes or until firm.) Roll balls in cocoa powder. Store truffles in airtight container in refrigerator.

Steps:
- In med saucepan, bring butter and cream to a boil over med-high heat.
- Remove from heat.
- Add chocolate, liqueur and rind.
- Stir until melted and smooth.
- Pour truffle mixture into a shallow bowl.
- Chill for 2 hours.
- Line 2 baking sheets with waxed paper.
- Shape rounded teaspoonfuls of truffle into 24 small balls.
- Place truffles on prepared baking sheets.
- Chill 30 minutes.
- Melt chocolate and oil in a double boiler until smooth.
- Transfer chocolate into a bowl.
- Cool slightly.
- Using 2 forks, coat 3/4 of the truffles in chocolate, allowing excess coating to drip back into the bowl.
- Cover 6 truffle in sprinkles.
- Sift icing sugar over 6 truffles.
- Leave 6 chocolate coated truffles plain.
- Coat remaining 6 truffles in cocoa.
- Chill 30 minutes.
- Store in fridge for 10 days or in freezer for 3 months.

- Beat the butter and brown sugar with an electric mixer in a large bowl until smooth. Beat in the vanilla extract. Add flour, alternately with sweetened condensed milk, beating well after each addition. Fold in the chocolate chips and toffee bits; mixing just enough to evenly combine.
- Using a small cookie scoop, make 1-inch balls and place them on waxed paper lined baking sheets. Refrigerate until firm, about 1 hour.
- Melt the chocolate coating in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or coating will scorch. Dip the dough balls in the chocolate coating, allowing any excess to drip off. Place on waxed-paper lined baking sheets and sprinkle the truffles with additional toffee pieces. Refrigerate until firm, about 15 minutes. Store in the refrigerator.

- Using a rolling pin crush 1 package of Golden Double Stuf Oreos (minus 9 cookies) to a fine crumble. Set aside.
- In a medium sized mixing bowl cream together the cream cheese and orange extract until smooth. Intermittently add the cookie crumbles to the bowl until they are completely combined.
- Place the cream cheese cookie mixture in the freezer for 30 minutes. Once chilled, use a measuring tablespoon to scoop and roll the mixture into even balls that are approximately 1” in diameter. Arrange the ball on a parchment lined baking sheet. You will end up with what will become 20-25 truffles depending on your ball size and how much you sneak from the bowl. Return the balled mixture to the freezer for another 30 minutes.
