PEACH BARBECUE SAUCE



Peach Barbecue Sauce image

Sweet and spicy, this is a whole bunch tastier than your normal bottled barbecue sauce. I make this from late summer harvested fruits and vegetables and can it for use throughout the year and for holiday gifts. It is very mild, but that can be tweaked if you're so inclined.

7 large white peaches, peeled and pitted
5 large tomatoes, stems removed
1 large sweet onion, peeled
3 bell peppers - halved, seeded, and stems removed
10 cherry peppers - halved, seeded, and stems removed
5 jalapeno peppers - halved, seeded, and stems removed
4 cloves garlic, peeled
2 cups white sugar
1 cup apple cider vinegar
2 tablespoons liquid smoke flavoring
2 tablespoons herb seasoning (such as Bragg® Sprinkle Seasoning)
1 tablespoon mustard seeds
1 tablespoon canning salt
1 tablespoon cracked black pepper
2 teaspoons celery seeds
½ teaspoon ground ginger
½ teaspoon ground cinnamon
1 (6 ounce) can tomato paste
6 1-pint canning jars with lids and rings

Steps:

  • Place peaches, tomatoes, onion, bell peppers, cherry peppers, jalapeno peppers, garlic, sugar, vinegar, liquid smoke, herb seasoning, mustard seeds, salt, black pepper, celery seeds, ginger, and cinnamon in a large stockpot. Bring to a boil; cook and stir until peaches and vegetables begin to brown, scraping the bottom of pot frequently to keep from scorching, about 1 hour.
  • Reduce heat and simmer mixture until softened and slightly reduced, 30 more minutes. Remove from heat.
  • Puree mixture using a hand blender until well blended. Pour mixture, about 1 cup at a time, through a fine mesh strainer; press remaining sauce in strainer with a ladle to remove fibrous portions of tomato skins. The strained sauce should be glossy and thick. Stir in tomato paste and blend until smooth.
  • Sterilize jars and lids in boiling water for at least 5 minutes. Pack the barbeque sauce into the hot sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for at least 30 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

2 habanero peppers, stemmed
¼ cup unsalted butter
4 cloves garlic, minced
½ cup brown sugar

Steps:

  • Blend mango, peach, and habanero peppers in a food processor or blender until smooth.
  • Melt butter in a saucepan over medium heat; cook and stir garlic until fragrant, about 1 minute. Add mango mixture, brown sugar, Worcestershire sauce, ginger, salt, and pepper; reduce heat to low and simmer until sauce is smooth and slightly thickened, about 8 minutes.

1 1/2 cups roughly chopped peeled fresh mango (8.7 oz, from about 12 oz whole mango)
2 minced habanero peppers
2 medium garlic cloves, minced (about 2 teaspoons)
1 cup apple juice or 1 cup pure mango juice
1 cup tomato sauce
1/3 cup molasses
2 tablespoons honey
1/3 cup apple cider vinegar
2 tablespoons bottled lime juice
1 tablespoon tamari
1 teaspoon grated ginger
1/3 cup sugar
1 tablespoon onion powder
1/2 tablespoon mustard powder (I used hot, but use what you have)
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper

Steps:

  • Combine all the ingredients in a pot and bring to a boil.
  • Reduce heat to low and simmer until mangoes have completely softened and sauce has slightly thickened, about 30 minutes, stirring occasionally.
  • Puree sauce with an immersion blender, or in the jar of a regular blender, until smooth.
  • Either cool to room temperature and store in refrigerator for up to a month or can in a water bath for 30 minutes.

3 sweet seasoning bell peppers
1 tablespoon butter
2 cups mangoes, chopped (ripe)
1 tablespoon ginger, freshly grated
3 green onions
1 pinch allspice
1 teaspoon black pepper
3/4 teaspoon sea salt
1/2 cup lime juice
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons ground mustard
1/4 cup light brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon molasses
5 tablespoons cilantro, chopped
1/2 cup apple cider vinegar
1 tablespoon white vinegar
1 cup mango juice
1 teaspoon paprika
1/2 scotch bonnet pepper (no seeds)

Steps:

  • Wash, peel and dice your mango (you can probably use frozen mango chunks as well) and set aside. Then give your green onions (aka scallions or spring onions) and peppers a fine chop. Now heat the butter in a heavy pot (distribute heat better) and start building a flavor base. Add the green onion, peppers, spices, black pepper and grated ginger to the pot and turn your heat down to low so it cooks very slowly. Stir and cook for 4-5 minutes.
  • Turn up your heat and start adding the mango chunks, give that a stir and add everything else to the pot. It's important that you stir well and bring up to a boil.
  • After it comes to a boil, reduce the heat so you have a gentle simmer going and place the lid on the pot and allow to cook for about 25 minutes. You will have to stir every 4-5 minutes as it may start to stick to the bottom of the pot. Your kitchen will have a very intoxicating aroma and your sense of smell will get confused. The same will happen when you taste this mango bbq sauce... you won't know if it's the mango, the mustard or the mellowness of the honey that's attracting all that attention from your taste buds.
  • After 25 minutes, you should taste for salt and adjust accordingly. Since no 2 mango are the same (can be tart at times), you may have to add a little more honey or mustard. the goal is to have a wonderful blend of flavors, but keep the present of mango as the key subject of the sauce. By now your sauce should have started to thicken up and the mango should be dissolving. You can certainly play around with the consistency (if you want it chunky, runny or thick). I then turned off the stove and used a submersion blender to make my mango bbq sauce a bit smooth. You can use a wire whisk or potato masher as well with pretty much the same results. If using a blender as I did, try not to over work it or risk it going frothy.

1 medium-size mango, flesh removed
2 tablespoons olive oil
1/2 cup finely chopped onions
1 tablespoon chopped garlic
1 cup ketchup
1 tablespoon Dijon-style mustard
2 tablespoons corn syrup
1 teaspoon Worcestershire sauce
1 teaspoon Tabasco, or to taste
4 slices lemon
Salt and freshly ground black pepper to taste

Steps:

  • Place the mango in the bowl of a food processor, and puree to a coarse texture.
  • In a saucepan combine the olive oil, onions and garlic. Saute briefly over medium-high heat, or until wilted. Add remaining ingredients, stir and bring to a simmer. Cook for 5 minutes. Remove and let cool. Surplus sauce can be refrigerated in an airtight jar and used with any barbecued meat or poultry.
