Some years ago, our daughter welcomed me home from a hospital stay with this Asian dish and a copy of the recipe. Now I freeze leftovers for fast future meals. -Kay Bade, Mitchell, South Dakota

1 pound ground beef
1 medium onion, chopped
1 bunch celery, sliced
2 cans (14 ounces each) Chinese vegetables, drained
2 envelopes brown gravy mix
2 tablespoons soy sauce
Hot cooked egg noodles or rice

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 3-qt. slow cooker. Stir in the celery, Chinese vegetables, gravy mixes and soy sauce. Cover and cook on low until celery is tender, 4-6 hours, stirring occasionally. Serve with noodles.

1/4 cup oyster sauce
1 tablespoon soy sauce
3 cloves garlic, minced
2 teaspoons freshly grated ginger
1 teaspoon Sriracha
1 (16-ounce) package Hong Kong-style pan-fried noodles
Kosher salt and freshly ground black pepper, to taste
2 tablespoons canola oil
1 (3.5-ounce) package shiitake mushrooms
4 baby bok choy, coarsely chopped
1 cup mung bean sprouts, rinsed and drained

Steps:

  • In a small bowl, whisk together oyster sauce, soy sauce, garlic, ginger and Sriracha; set aside. Heat 1 tablespoon canola oil in a large skillet or wok over medium high heat. Add noodles and cook, stirring constantly, until golden brown and crispy, about 3-4 minutes; set aside. Heat remaining 1 tablespoon canola oil in the skillet. Add mushrooms, and cook, stirring often, until tender, about 3-4 minutes. Stir in bok choy until just wilted, about 1 minute. Stir in noodles and oyster sauce mixture until well combined, about 2 minutes. Stir in bean sprouts. Serve immediately.

One 12-ounce bag semisweet chocolate chips, such as Ghirardelli
One 5-ounce can crispy chow mein noodles (about 2 1/2 cups)
3/4 cup salted and roasted almonds, coarsely chopped
1/2 cup finely chopped dried mango
1/8 teaspoon cayenne pepper, optional

Steps:

  • Line a baking sheet with parchment or wax paper.
  • Place the chocolate in a small bowl over a saucepan of barely simmering water. Stir occasionally until the chocolate is melted and smooth, about 4 minutes.
  • Combine the noodles, almonds, mango, cayenne pepper if using and melted chocolate in a large bowl. Stir until all the ingredients are coated with chocolate. Scoop the mixture onto the prepared baking sheet using a 1/4-cup ice cream scoop and allow the cookies to harden at room temperature, about 2 hours. Store the cookies in an airtight container at room temperature.
  • Cook's Note: Use scissors to cut the dried mango into pieces.

1/2 cup peanuts

Steps:

  • Gather the ingredients.
  • Lay a sheet of waxed paper or parchment paper on the countertop.
  • Put the butterscotch chips in a medium microwave-safe bowl or container. Microwave at 50% power for about 3 to 5 minutes, or just until the butterscotch chips are melted.
  • In a large bowl, mix the peanut butter, peanuts, melted butterscotch chips, and chow mein noodles, stirring gently to coat the noodles thoroughly.
  • Drop teaspoons of the mixture onto the parchment paper. Let them stand at room temperature until set.
  • Transfer candies to a container, separated by sheets of waxed paper.
