PERFECT HOMEMADE CARAMEL ROLLS



Perfect Homemade Caramel Rolls image

Just like Grandma used to make! These delightful rolls are covered in sticky caramel sauce and will melt in your mouth, bite after bite.

1/2 cup warm water (approximately 110*F)
2 tbsp active dry yeast
1/2 tsp sugar
1 1/2 cups warm milk (approximately 110*F)
1/2 cup butter (1 stick, softened)
2 eggs
1/2 cup sugar
1 tsp salt
7 - 7 1/2 cups flour
1/2 cup butter (1 stick)
1 cup brown sugar
2 tbsp cinnamon
1 cup brown sugar
1 cup butter (2 sticks)
1-2 tbsp cream or half & half (optional)

Steps:

  • In a measuring cup, mix together warm water, yeast, and 1/2 tsp sugar. Allow to rise for 5-10 minutes while you get started on the rest of the dough.
  • In the bowl of a stand mixer fitted with a dough hook pour the warm milk over the butter and to get it melting. Add in the eggs and sugar and mix.
  • Once the yeast mixture has grown add it to the bowl of the stand mixer along with the salt and 3-4 cups of flour. Mix with the dough hook.
  • Slowly add in the remaining flour until the dough comes together. It should be soft and not overly sticky. Knead for several minutes to bring it together.
  • Put the dough in a large bowl coated in oil or cooking spray and let rise for 2-3 hours, or doubled in size.
  • Once the dough has doubled, punch it down and allow it to rise for an additional 1-2 hours.
  • After punching the dough down, start the caramel sauce. Add brown sugar and butter (plus optional cream) to a sauce pan and melt over low heat. You do not want this to boil!
  • Stir the sauce continually until the sugar is completely dissolved. There will be butter remaining on the top of the sugar - do not add more sugar! The caramel sauce will become too thick if extra sugar is added.
  • Pour the finished caramel sauce into two 9x13 glass pans. You can use metal pans but I've always had the best luck using glass. Allow the caramel to cool while you continue with the rolls.
  • After the second rise, split the dough in half and on a floured surface, roll out the dough into a rectangle, about 6"x12". This doesn't need to be perfect, but you do want the dough to stay about 1/4" inch thick.
  • Spread softened butter over the dough. I usually start with a few tablespoons up to half a stick for each half of the dough. You need enough butter for the filling to stick. Spread brown sugar and cinnamon over the butter. I usually use about 1/2-3/4 cup per half of the dough because we like them really full of filling, but you can cut back on this if you'd like.
  • Starting at one side, roll the dough evenly and somewhat tight. Not too tight, or they won't have room to expand! You can pinch the end closed, but I never do and don't have an issue.
  • Cut the log into even-sized rolls. I start by cutting it in the middle, lining the two sides up side by side, and cutting those in half, then each half into three rolls for a total of 12 rolls. You could cut them thinner if you want more small rolls. I've used both a bench scraper and a pizza cutter for slicing my rolls - both work fine.
  • Place the rolls into one pan of caramel then repeat with the second half of dough into the second pan of caramel.
  • Let the rolls rise on the counter for 30 minutes while your oven preheats to 350*. Make-ahead directions are below!
  • Bake the rolls for 20-25 minutes or until the tops are starting to brown.
  • Remove from oven and place a large flat cookie sheet on the top of each pan. Very, very carefully flip the pan to invert the rolls on to the cookie sheet. This will allow the rolls to release from the pan and all the caramely goodness to ooze all over the rolls. This may or may not be one of my favorite steps ;) But be careful! That caramel is hot and can burn you.
  • Use a rubber spatula to scrape out any lingering caramel. Let cool just long enough to be safe then enjoy! Rolls will last on the counter up to 3 days.
  • Follow steps 1-14 above. Once you've put the rolls in the pans, cover and place in the fridge to rise overnight.
  • Remove from the fridge and allow to rise on the counter for 30 minutes while the oven preheats to 350*. Continue following steps 16-18 above. Enjoy!

These caramel cinnamon rolls are ah-mazing!! They're made using my favorite homemade cinnamon roll recipe and have a delicious caramel sauce for cinnamon rolls.

2 cups Water (luke warm)
1/4 cup Sugar
2 tablespoons Active Dry Yeast
1/4 cup Butter (melted)
2 large Eggs
1 tablespoon Salt
5.5-6 cups All-Purpose Flour
1/2 cup Butter (melted, or very soft)
1 cup Dark Brown sugar
2 tablespoons Ground Cinnamon
1/4 cup Butter
1 cup Dark Brown Sugar
1/2 cup Karo Syrup
1/2 15-oz can Sweetened Condensed Milk

Steps:

  • In the bowl of a stand mixer, add the warm water, sugar and yeast and stir well. Let the mixture sit for 5-10 minutes until it gets bubbly and activates the yeast.
  • Add the melted butter, eggs, salt, and 2 cups of flour, then mix on low using the bread hook for 2 minutes, or until everything is well-mixed.
  • Add an additional 3.5 cups of flour, then stir on low to combine. You may need to add up to 1/2 a cup more (you will know you've added enough flour when the dough pulls away from the sides of the mixing bowl). Once all of the flour has been added, continue to knead on low for 3 minutes more.
  • Turn off the mixer and cover the bowl with a kitchen towel. Let the dough rest in a warm place for about 30 minutes, or until doubled in size.
  • Once the dough has double, turn it out onto a floured surface and form it into a small rectangle with your hands. Then, using a rolling pin, gently roll the dough into an approximately 24" x 12" rectangle (should be about 1/2" thick).
  • Using an offset spatula, or knife, carefully spread the 1/2 cup of soft or melted butter evenly onto the rolled dough. Sprinkle the cinnamon and brown sugar evenly over the top, then pat down gently.
  • Starting at either 24" side, roll the dough up evenly making sure to get a nice tight tube, then cut into 12 evenly sized slices using a very sharp knife (they should be about 2" each). We recommend using a ruler and pre-marking before you actually make any cuts.
  • Lay the slices in a greased 9 x 13" baking pan, cover loosely with a kitchen towel, and let the cinnamon rolls rise for another 30 minutes or until double and touching in the pan.
  • While your dough is rising, preheat the oven to 350 degrees. Once risen, bake in a preheated oven for 18-22 minutes, or until the bottom and the top are golden brown.
  • Remove from the oven and pour the warm caramel sauce over the tops while they are still warm. Let them cool for about 5 minutes, then serve warm. Enjoy!

24 frozen dinner roll dough, thawed, divided
½ cup butter
1 cup brown sugar
1 (4.6 ounce) package cook-and-serve vanilla pudding mix
2 tablespoons milk
½ teaspoon ground cinnamon

Steps:

  • Grease a 9x13-inch baking dish.
  • Arrange 12 dinner rolls in the prepared baking dish.
  • Melt butter in a saucepan over medium-low heat. Add brown sugar, pudding mix, milk, and cinnamon to melted butter; stir until smooth. Pour pudding mixture over rolls; top with remaining 12 rolls. Allow rolls to rise for 3 hours.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake in the preheated oven until rolls are cooked through, 30 to 35 minutes. Cool for 15 minutes before serving.

¾ cup water
2 tablespoons butter
2 cups white bread flour
2 tablespoons white sugar
1 ½ tablespoons nonfat dry milk powder
1 teaspoon fast-rising dry yeast
½ teaspoon salt
½ cup brown sugar
¼ cup light corn syrup
¼ cup butter
¼ cup chopped pecans
¼ cup butter, softened
½ teaspoon ground cinnamon

Steps:

  • Combine water, 2 tablespoons butter, bread flour, white sugar, milk powder, and yeast, in that order, in the bucket of a bread machine. Select the Dough cycle. Remove dough from the machine after the cycle is done, about 1 hour 45 minutes.
  • Combine brown sugar, light corn syrup, and 1/4 cup butter in a saucepan over medium heat. Cook and stir until sugar is dissolved, about 3 minutes. Pour sauce into an 8-inch square baking pan. Sprinkle with pecans.
  • Turn dough out onto a floured surface, punch it down, and roll into an 8x12-inch rectangle. Dot with 1/4 cup butter and sprinkle with cinnamon. Roll up and pinch seams together. Slice roll into 1 1/2-inch thick slices; place slices into the pan on top of the sauce. Set aside until doubled in size, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake rolls in the preheated oven until golden brown, 20 to 25 minutes. Cool in the pan for no more than 3 minutes; place a sheet of waxed paper on top of the pan and invert so that sauce and pecans are on top.

Easy, easy, easy! I can't count the compliments I've received from these. I used to take three of them to bake sales when I worked. They always sold first! They just look so yummy, people think you just had to work very hard and long on them! I got this recipe from my mom at least 30 yrs ago and my family has enjoyed them ever since! I was out of pecans once and the kids begged for them so I made them anyway and they were almost as good. If you have a timer on your stove, you can set it for the baking time to begin and end. The wonderful aroma will wake you up! Set your alarm anyway,,don't want to ruin a good thing! I hope this becomes a family favorite of yours too. Also, the first time you make them, watch them closely not to over or undercook the rolls. use 1 large round platter or pizza pan covered with foil. They look awesome on a fancy platter

1 (22 count) package rhodes frozen dinner rolls (or your favorite brand)
1 (3 1/2 ounce) box butterscotch pudding mix (NOT instant)
1/2 cup butter or 1/2 cup margarine
3/4-1 cup packed brown sugar
1/2 cup pecan pieces (or more)
cooking spray

Steps:

  • All this is done the night before: spray your bundt pan well and place evenly the frozen rolls in pan. Sprinkle the dry butterscotch pudding (instant will not work) evenly on top of rolls and sprinkle pecan pieces over pudding powder (add pecans 2nd, not last).
  • Heat the butter to just melted, not hot in microwave and stir in brown sugar. If the butter is too hot, the brown sugar will separate and be hard to blend together pour brown sugar/butter syrup over rolls evenly.
  • That's it!
  • Place bundt pan in the cold oven overnight.
  • When you arise the next morning, set the oven temp to 325°F
  • Check the rolls FIRST before turning oven on to see if they rose over the top of the bundt pan. If they did, push the rolls hanging over back GENTLY.
  • Don't remove rolls while the oven is heating, leave inches.
  • Bake about 25 minutes until rolls seem firm on top and done in the middle, but don't over bake.
  • Remove bundt pan from oven and let cool 5-10 minutes in pan (I usually wait only 5 minutes).
  • Have ready a platter or pizza pan (holes covered) big enough to hold the rolls being careful not to burn yourself, place platter over the top of Bundt pan and quickly invert.
  • Do this over the counter top so if some spills, it won't get on the floor.
  • All that's left is to enjoy!
  • Company or family will think you slaved hours, it looks so yummy.
  • This is great for bake sales also.
  • Tip: don't put over 22-24 at most rolls in the pan.
  • I always use just 22.
  • Any more and they will rise over the top of the pan and hang over.
  • If this happens, while rolls are cooling, carefully push back the edges of the rolls and gently push down on the top of them.
  • I use more butter and sugar than other recipes because my family really likes alot of caramel.
  • However, you could cut back the butter to 1/2 stick and the sugar 1/2 cup.
  • I just prefer too much to too little.
  • The caramel can be scooped up and put toward the middle rolls.

1/2 cup sugar
1 teaspoon cinnamon
1/2 cup chopped pecans
1/2 cup butter

Steps:

  • The night before, grease 10X13 pan and place frozen rolls in bottom then sprinkle 1/2 cup white sugar, 1 tsp cinnamon, 1/2 cup chopped nuts and then dry pudding over top.
  • In medium saucepan, melt 1/2 cup butter and 1/2 cup brown sugar and pour over top of rolls.
