CILANTRO BEAN BURGERS WITH CREAMY AVOCADO-LIME SLAW



Cilantro Bean Burgers with Creamy Avocado-Lime Slaw image

Lighten up your burger! Bean patties have less saturated fat and more fiber than beef patties. They're also cheaper and easier to cook indoors--and we promise they're just as satisfying, especially with the mouthwatering creamy slaw on top.

1 (15 ounce) can no-salt-added black beans, rinsed
2 cloves garlic, minced, divided
½ teaspoon ground cumin
½ teaspoon salt, divided
⅛ teaspoon ground pepper
¼ cup crushed tortilla chips or panko breadcrumbs
¼ cup quick-cooking oats
2 tablespoons toasted pumpkin seeds, chopped
2 tablespoons chopped fresh cilantro plus 1/2 cup, divided
1 large egg, lightly beaten
¼ cup low-fat plain Greek yogurt
½ avocado
1 teaspoon lime zest
2 tablespoons lime juice
2 tablespoons water
4 cups shredded cabbage (green and/or red)
2 teaspoons olive oil
4 whole-wheat buns, halved and toasted

Steps:

  • Combine beans, half the garlic, cumin, 1/4 teaspoon salt, and pepper in a medium bowl. Mash with a fork until all the beans are smashed. Stir in crushed chips (or panko), oats, pumpkin seeds, 2 tablespoons cilantro, and egg.
  • Divide the mixture into 4 portions, then shape into patties. Place on a plate and refrigerate for 30 minutes before cooking.
  • Meanwhile, combine the remaining 1/2 cup cilantro, the remaining garlic, yogurt, avocado, lime juice, and water in a blender or food processor. Puree until smooth. Transfer to a large bowl. Stir in lime zest and the remaining 1/4 teaspoon salt. Add cabbage and toss to combine.
  • Heat oil in a large nonstick skillet over medium-high heat. Add the patties and cook for 6 minutes. Turn them over, reduce heat to medium, cover and cook until golden brown and warmed through, 5 to 6 minutes more. Serve the burgers on buns, topped with 1/4 cup cabbage slaw each. Serve the remaining slaw on the side.

These Easy Spicy Black Bean Burgers have just the right amount of spice and a nice hint of lime. Switch up the menu for the BBQ and enjoy this simple delicious vegetarian burger recipe.

2 cans black beans
1 jalapeño (seeds removed for less spice)
1/4 of small red onion
1/2 cup corn kernels
2 garlic cloves
1/3 cup cilantro
1 - 2 tsp cumin
1 tsp chili powder
¼ -1/2 tsp red pepper flakes
Juice of 1/2 lime
2/3 cup bread crumbs (more if mixture is too thin) (whole wheat or gluten free, panko crumbs will work as well)
1 egg or flax egg
½ tsp cracked pepper
½ tsp sea salt

Steps:

  • In a food processor, process the jalapeño, onion, and garlic until finely ground. (You can finely dice them instead if desired!)
  • Add in one can or two cups of black beans, cilantro, lime juice and spices. Pulse until combined (there should still be chunks of black beans.)
  • Transfer the mixture to a medium sized mixing bowl.
  • Add in the rest of the black beans, egg or flax egg, bread crumbs, and corn and stir until combined.
  • Form into burger sized patties. (Sometimes I freeze this for about 15 minutes or so to help them form better into burgers.)
  • Grill over medium heat for about 4 minutes on each side.
  • You can also cook these in a frying pan over medium heat until browned on each side. Refrigerate leftovers for 5 days or freeze for about 2 months.

1 tablespoon olive oil
2 scallions, white and green parts separated, thinly sliced
Coarse salt and ground pepper
2 cans (19 ounces each) black beans, rinsed and drained
1 teaspoon chili powder
1 tablespoon fresh lime juice

Steps:

  • In a medium saucepan, heat oil over medium. Add white part of scallions, and season with salt and pepper. Cook until softened, about 3 minutes.
  • Add beans, chili powder, and 1/4 cup water. Cook until warmed through, about 5 minutes. Remove from heat, and stir in lime juice; season with salt and pepper. Serve garnished with green part of scallions.

  • Add the drained black beans, zest and lime juice. Stir well, then mash with a potato masher until mostly mashed, leaving a little texture, then stir until combined. (You could also pulse in a food processor). Taste, adjust heat level.
  • At this point you can add ¼-⅓ cup ground flaxseed if you want this vegan. Otherwise, let cool, add the egg, cilantro, scallions and the bread crumbs and mix well until combined well. Let stand 10-15 minutes so the breadcrumbs or/flax have a chance to absorb moisture.
  • Using clean damp hands, form and compress tightly into 4 large patties (or 5 or 6 smaller ones), smoothing the edges. If the mixture seems too soft either refrigerate to firm up, for 30 minutes, or add more bread crumbs/flax.
