2 cups all-purpose flour
1 cup packed brown sugar
1/2 teaspoon salt
1 cup butter, melted
FILLING:
3 large eggs
1 can (14 ounces) sweetened condensed milk
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup butter, melted
3 teaspoons vanilla extract
1/2 teaspoon salt
4 cups sweetened shredded coconut, divided

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides., In a large bowl, mix flour, brown sugar and salt; stir in 1 cup melted butter. Press onto bottom of prepared pan. Bake until light brown, 12-15 minutes. Cool 10 minutes on a wire rack. Reduce oven setting to 325°., In a large bowl, whisk the first 7 filling ingredients until blended; stir in 3 cups coconut. Pour over crust; sprinkle with remaining coconut. Bake until light golden brown, 25-30 minutes. Cool in pan on a wire rack. Lifting with parchment, remove from pan. Cut into bars.

2 cups dried pitted Medjool dates
.3333 cup tahini (sesame paste)
1 teaspoon vanilla extract
.5 teaspoon ground cinnamon
.5 teaspoon ground cardamom
1 cup chopped walnuts
.3333 cup unsweetened shredded coconut
.3333 cup chopped crystallized ginger

Steps:

  • Process dates, tahini, vanilla, cinnamon, and cardamom in a food processor until mixture clumps together, about 45 seconds. Transfer to a large bowl.
  • Add walnuts, coconut, and ginger to date mixture; knead until combined.
  • Press mixture into an 8-inch square dish lined with parchment paper. Chill until firm, about 30 minutes. Cut into 8 (4- x 1⅔-inch) rectangles.

2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/3 cup light brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups sweetened flaked coconut
1 cup semi-sweet chocolate chips
2/3 cup coarsly chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • Butter a 9" square baking pan.
  • Sift the flour, baking soda and salt together into a mixing bowl.
  • Cream butter with sugars in another bowl until light and fluffy.
  • Beat in egg and vanilla.
  • Add coconut, chips, and walnuts and blend well.
  • Pour into pan and smooth out evenly.
  • Bake at 350 degrees for 20-25 minute or until top is golden brown.
  • Center will be slightly moist with toothpick test.
  • Allow to cool and cut into bars (about 24).

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.

3/4 cup unsweetened coconut flakes, toasted
½ cup sliced or slivered almonds
½ cup raw cashews
⅛ teaspoon salt

Steps:

  • Soak dates in hot water to cover in a medium bowl for 10 minutes. Drain.
  • Meanwhile, line a 9-by-5-inch loaf pan with parchment paper, leaving extra hanging over 2 sides. Lightly coat with cooking spray.
  • Process the soaked dates, coconut, almonds, cashews and salt in a food processor until very finely chopped. Spread the mixture evenly and firmly in the prepared pan. Refrigerate until cold, at least 1 hour.
