EASY COMPANY CHICKEN
Chicken breasts baked with a creamy curry, mayonnaise and Parmesan cheese sauce. Easy, fast and tasty. This is great served with rice, as you can pour the sauce over the rice. It is my family's all time favorite recipe!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken in a 9x13 inch baking dish. In a medium bowl, combine the soup, mayonnaise, curry powder and cheese. Mix well and pour mixture over chicken.
- Cover dish and bake at 350 degrees F (175 degrees C) for 35 to 40 minutes or until chicken is cooked through and no longer pink inside. Remove cover for last 10 minutes of baking to lightly brown the top.

Steps:
- Preheat the oven to 350 degrees F.
- Coat the chicken breasts in the dressing mix.
- Heat the oil in a large nonstick skillet over medium-high heat until very hot. Add the chicken and cook undisturbed until well browned, about 4 minutes. Turn the chicken, add the butter to the pan, and cook until the chicken is just golden brown on the reverse side, 3 minutes more. Transfer the chicken to a large baking dish.
- To the skillet, add the mushrooms and a pinch of salt; cook, stirring occasionally, until golden brown, about 5 minutes. Spoon the mushrooms on top of the chicken.
- In a medium saucepan combine the soup, cream cheese and wine. Stir over medium-high heat until well blended and heated through. Pour the sauce over the chicken and mushrooms.
- Bake, uncovered, until the chicken is cooked through, 1 hour. Sprinkle with parsley and serve.
EASY COMPANY CHICKEN
Close as I can find to our favorite recipe in college, very easy and sooooo good! You can add vegetables too for a one dish meal, or double the amount and add 1 can each cream of celery and cream of chicken soup.

- Preheat over to 350. Place chicken breasts in a greased baking dish. Cover each breast with a slice of cheese. Mix together water/wine with soup, pour over the top of chicken. Top with unprepared stuffing mix, you can use more or less to your liking. Drizzle butter over stuffing. Bake uncovered for 50-60 minutes.

- Mix the soup, cream cheese and wine together.
- Arrange the chicken in a greased 9 x 13-inch casserole dish.
- Pour mixture over the chicken, turning chicken to coat well.
- Crush oregano and sprinkle over the top. Salt and pepper to taste.
- Cover with foil and cook in oven for 1/2 hour at 350 degrees. Remove foil and cook another 1/2 hour. Baste the chicken with the sauce.
- Serve over hot noodles or rice. Sprinkle with chopped parsley or green onions.

An all in one dish, dinner. Very comforting and the chicken is so moist it falls off the bone. All that is needed a nice green vegetable for an easy and delicious meal.

Steps:
- Peel potatoes and slice in half lenthwise. Lay flat side down in a 9 x 13 lightly buttered pan sprinkle with salt and pepper and sliced onions.
- Season chicken pieces the way you like and brown lightly in a large fry pan. Lay chicken pieces on top of potatoes spread the soup over chicken and follow with the shredded cheddar cheese.
- Bake at 350 for 1-1/2 to 2 hours. You may need to cover with foil after the first 1 hour if top browns to quickly.

- Preheat oven to 325*.
- Spray 13x9" baking pan, or lightly grease.
- In medium saucepan, combine soups, water, and butter or margarine.
- Heat through till butter melts, but do not boil.
- Remove from heat.
- Reserve 1 cup sauce.
- Stir in mushrooms (if desired), and stir in rice.
- Pour rice mixture in 13x9" pan,and place chicken pieces on top.
- Pour over reserved cup of sauce.

- Thaw your bread dumplings, spread one side with softened butter, then heat a skillet with 4 T of butter and fry the bread dumplings (or french bread) on both sides until crispy and golden brown. When they are nearly done, sprinkle both sides with garlic salt and pepper and transfer to a cookie sheet to cool.
- Take your chicken out of the package and season your 2 cups of flour with the seasoning salt. Stir the flour and the salt until it is well combined. Place your chicken cutlets in the flour mixture and press down, flip and do the same to the other side, so that the whole cutlets is floured. Place on a dish to the side to cook later. Repeat process until all your cutlets are floured.
- In the same pan as the bread dumplings were fried, add 4 more tablespoons of butter and add your mushrooms. I like to cook my mushrooms for quite some time, until they are a crispy golden brown. You can cook yours until your preferred level of doneness. When they are fully cooked, add the worcestershire sauce to the pan and toss all the mushrooms in the sauce. Set the mushroom aside.
- You will need a second skillet to cook the chicken and make the sauce. Heat a skillet with 4 tablespoons of butter and 1/4 c of olive oil. Then add the chicken cutlets a few at a time. You will need to cook the chicken in batches. The chicken should be very thin and will only need a few minutes on each side. Cook each side for about 4 to 6 minutes. Do not flip often because you want that flour to create a crust on the chicken. As your chicken cooks, set it aside on a clean plate while you finish cooking all the pieces.
