Steps:
- In a microwavable baking dish, arrange tilapia fillets in a single layer. Dot with pieces of butter, and minced garlic. Sprinkle over fresh tarragon. Cover with waxed paper and microwave on high for 2 minutes.
- Turn fillets over, recover, and continue to microwave on high for a further 2 minutes. Remove immediately, sprinkle with apple cider vinegar, and serve.

ASIAN TILAPIA IN FOIL
Tilapia is popular in many Asian cuisines. Use low-sodium soy sauce to cut back on the sodium, if desired. I wasn't crazy about it, but so far I haven't liked any tilapia recipes--I just don't like the taste of the fish, I guess! The topping is good, though, and I will probably use it with other kinds of fish I do like--like snapper or cod. I did find that it took a lot longer to cook than the recipe originally called for (10-12 minutes at 425* F), so I've updated it. If you are using thin fillets in single layers, you may want to cut back on the heat and time a bit. You can always cook it longer if needed, but you can't un-cook it!

Steps:
- Preheat oven to 450* F. Wash fillets and pat dry. Tuck thin ends under so the whole fillets will be of equal thickness.
- Place each fillet on 12x15" pieces of foil.
- Combine soy sauce, sesame oil, ginger, and pepper and spoon over fillets. Sprinkle scallions on top of each fillet. Fold the foil over fish and crimp edges to seal.
- Place packets on baking sheet in a single layer.
- Bake at 450* F for 12 to 15 minutes, until foil is puffed and fish flakes easily when tested with a fork.

- Coat the bottom of a shallow plate with a thin layer of olive oil to prevent sticking. Advertisement.
- Place your tilapia fillets on the plate in a single layer, with the thickest parts of the fish facing the edges of the plate because they will cook more quickly there.
- Rub some seasonings like salt, pepper or chili powder on both sides of the tilapia fillets to coat them.
- Place some fresh herbs, like tarragon and dill, over the fish, if desired. In addition, you can sprinkle some chopped aromatics like onions, carrots and celery over the fish to add additional moisture and flavor.
- Squeeze a lemon and pour the juice all over the tilapia fillets. The acidic juice will keep the delicate fish tender while adding some zing to its flavor.
- Pour a small amount of olive oil over the seasoned tilapia fillets to keep them moist during the cooking process.
- Cover the plate with a sheet of wax paper, and place it in your microwave. Cook the fish on high for approximately 4 minutes. Allow the fish to sit for a minute before testing it with a fork.
- Remove the tilapia, herbs and veggies from the plate to serve. Microwave the remaining fish juice, oil and citrus juice for 1 to 2 minutes, uncovered, to reduce and soften them.
