EASY BLINI (RUSSIAN PANCAKE)

I love these bite-sized pancakes because they make perfect appetizers. Top blini with smoked salmon, creme fraiche, or even caviar. Add a sprig of dill and they are sure to impress. My children also love eating these plain too!

1 cup all-purpose flour
¾ teaspoon salt
½ teaspoon baking powder
¾ cup milk
2 tablespoons milk
1 large egg
1 tablespoon melted unsalted butter
1 tablespoon unsalted butter

Steps:

Combine flour, salt, and baking powder in a bowl.
Whisk 3/4 cup plus 2 tablespoons milk, egg, and 1 tablespoon melted butter together in a separate bowl. Mix into the flour mixture until batter is fully combined.
Heat 1 tablespoon butter in a skillet over medium-low heat. Drop batter, 1 tablespoon at a time, onto the heated skillet. Cook until bubbles form, 1 1/2 to 2 minutes. Flip and continue cooking until brown, about 1 minute more. Lay on plate lined with a paper towel to help soak up excess butter. Repeat with the remaining batter.

Put the peach puree in a Champagne flute up to about 1/3 full and slowly top up with Prosecco.

This is good, refreshing and very easy to make with only a few ingredients. It looks very pretty served in champagne flutes. It serves two - four people, depending on size of glass. Enjoy!

Ingredients

1 1/3 cups peach nectar, chilled
1/3 cup seltzer water, orange, chilled
1/8 cup peach nectar (rimming glasses)
2 tablespoons white sugar (yellow, orange, pink)
4 orange wedges, small, for garnish

Steps:

Chill glasses in freezer.
Combine chilled nectar and seltzer in pitcher and blend well, place back in refrigerator until ready to use.
Remove the glasses from freezer, just before serving.
Rim the glasses with peach nectar, don't worry if it runs down into the glass.
Dip the glass in sugar, to evenly coat rim of glass. You could use coloured sugar, yellow, orange or pink, for this garnish.
Pour the peach and orange bellini mixture into the glasses and garnish with a small orange wedge.
Serve immediately.
