I love French onion soup so I came up with this rich recipe that's easy enough to whip up on a work night or serve as an elegant first course. -Jennifer Miller, Smyrna, Tennessee

1 large sweet onion, cut into 1/2-inch rings
1 large Spanish onion, cut into 1/2-inch rings
1 large red onion, cut into 1/2-inch rings
2 tablespoons sugar
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
2 teaspoons herbes de Provence
3/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
1/4 cup sherry or beef broth
1/4 cup dry red wine or beef broth
1 carton (32 ounces) beef broth
6 slices French bread baguette (1/2 inch thick)
2 cups shredded Gruyere or Swiss cheese

Steps:

  • In a Dutch oven, saute the onions, sugar, thyme, herbes de provence, salt and pepper in oil; cook over medium heat for 15-20 minutes or until lightly browned, stirring frequently., Add sherry and wine, stirring to loosen browned bits from pan. Gradually stir in broth. Bring to a boil. Reduce heat; cover and simmer for 10 minutes, stirring occasionally., Place bread slices on an ungreased baking sheet. Broil 3-4 in. from the heat for 1-2 minutes on each side or until lightly browned., Ladle soup into ovenproof bowls. Top each with a slice of toast; sprinkle with cheese. Place bowls on a baking sheet. Broil 2-3 minutes longer or until cheese is golden.

1 onion, sliced into thin rings
¼ cup margarine
2 (10.5 ounce) cans beef consomme
2 (10.5 ounce) cans beef broth
1 ½ cups water
¾ cup white wine
8 ounces sliced Swiss cheese
7 slices French bread

Steps:

  • In a large pot over medium high heat, saute the onions in the butter or margarine for about 5 minutes, or until tender. Add the consomme, broth, water and wine. Reduce heat to low and simmer for 45 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In individual oven-proof bowls, break up Swiss cheese slices and place one slice in the bottom of each bowl. Place one slice of bread on each slice of cheese. Ladle in the soup, place another slice of bread on top and cover with more Swiss cheese. Put bowls in the oven and allow cheese to melt on top.

This crockpot version is elegant, but inexpensive and very easy to put together -- my husband loves it! I usually serve mine with a salad & freshly-baked loaf of bread. Lots of other French onion soup recipes seem to call for an extreme amount of butter, but I've found that 1 or 2 tablespoons, along with some well-browned onions, will yield a lovely rich flavor.

4 medium yellow onions, sliced into thin rings
2 tablespoons butter
1 cup red wine
2 tablespoons flour
1 tablespoon sugar
3 (13 ounce) cans beef broth
1 teaspoon dark soy sauce or 1 teaspoon Gravy Master
2 beef bouillon cubes
1 dash dried rosemary
1 dash pepper
2 bay leaves

Steps:

  • Cook the onions in butter over medium/low heat for 20 minutes or until browned.
  • (You want the onions to be a golden color, but NOT black!) Remove from heat, and set aside.
  • Mix sugar, flour, a few dashes of pepper& rosemary, and 2/3 cup of the wine into a paste mixture.
  • Add this to the onions, and mix well.
  • Put the onion mixture into the crockpot.
  • Add broth and bay leaves.
  • Stir soup mixture very gently. (Stirring doesn't have to be overly thorough... just enough so that the onions are no longer a paste.)
  • Cook on "high" for 2 1/2 hours.
  • Add soy sauce, buillon cubes, and remaining 1/3 cup of wine.
  • Cover and continue cooking for 30 minutes.
  • Ladle into soup bowls and enjoy!

6 knorr beef bouillon cubes
8 cups water
4 tablespoons kerry irish gold salted butter
3 large onions
1 leek, cleaned and sliced thin
3 shallots, peeled and chopped fine
1 bunch scallion, trimmed and finely chopped
1 cup grated gruyere cheese
5 slices French bread
1 cup fish eye pinot grigio wine

Steps:

  • Peel and slice onions very thin and add sliced leek, finely chopped shallots and chopped scallions.
  • Melt butter on medium heat in a 4 quart pot.
  • Add all 4 types of onions and cook over medium-low heat, stirring occasionally, until caramelized ~ about 25-40 minutes minutes.
  • Bring 8 cups water to boil.
  • Add Knorr bouillon OR organic beef broth [vegans could substitute MORGA vegetable broth] to dissolve.
  • Add beef broth all at once to onions.
  • Add wine and heat just to boiling.
  • Toast french bread.
  • Grate gruyere cheese (or use Sargento grated cheese ~ swiss or Monterey jack are best).
  • Pour very hot soup into bowls and sprinkle grated cheese on top.
  • If desired, put ovenproof crocks or stainless steel container under the broiler to melt the grated cheese --
  • Serve with piece of toasted bread.
  • This would be very good chilled in the summer, too.
