These Strawberry Brownies start with a strawberry cake mix and just a few simple ingredients for the quickest dessert ever.

1 box strawberry cake mix (We used Pillsbury)
2 large eggs
1/3 cup vegetable or canola oil
1 tsp. vanilla extract
3/4 cup powdered sugar
2 Tbsp. strawberry preserves (or jam)
1 1/2 Tbsp. milk

Steps:

  • Preheat oven to 350 degrees F. Spray an 8x8 pan with nonstick spray or line with foil. Set aside.
  • In a large bowl, mix strawberry cake mix, eggs, oil and vanilla extract. Press into the prepared pan. Bake for 18-22 minutes, until just done. Let cool completely
  • In a small bowl, whisk together powdered sugar, strawberry jam and milk. Spread over the cooled strawberry brownies.

18 oz chocolate fudge brownie mix, 1 box, prepared according to package instructions
24 large strawberries
4 oz cream cheese
½ cup mini chocolate chips
½ teaspoon vanilla extract
1 cup high quality dark chocolate
1 cup high quality white chocolate
8 cookies and cream dipped cookie sticks
8 chocolate dipped cookie sticks
8 strawberry dipped cookie sticks
4 chocolate sandwich cookies, crushed
3 tablespoons red sprinkles
3 tablespoons freeze-dried strawberry, crushed

Steps:

  • Prepare the brownies according to the package instructions, then remove from the oven and let cool in the refrigerator for about 20 minutes.
  • While the brownies cool, use a melon baller or teaspoon to scoop out the tops and centers of each strawberry. Set each strawberry in the cup of a mini muffin tin.
  • In a large bowl, beat the cream cheese with an electric hand mixer until soft. Add the mini chocolate chips, vanilla, and cooled brownies and stir until mixture has a thick, dough-like texture.
  • Take 1 tablespoon of the brownie mixture in your hands and roll it into a ball. Place the brownie truffle inside a strawberry. Repeating with remaining ingredients.
  • Chill the strawberries in the refrigerator for 30 minutes.
  • Add the dark chocolate and white chocolate to 2 separate small bowl. Microwave each bowl separately in 30-second intervals, stirring between each, until melted, about 1 minute total.
  • Dip the top of 1 strawberry in the melted white chocolate, poke a cookies and cream-dipped cookie stick through the top, and sprinkle with chocolate sandwich cookie crumbs. Repeat with 7 more strawberries.
  • Dip the top of another strawberry in the melted dark chocolate, poke a chocolate-dipped cookie stick through the top, and sprinkle with red sprinkles. Repeat with 7 more strawberries.
  • Dip the top of another strawberry in the melted white chocolate, poke a strawberry-dipped cookie stick through the top, and sprinkle with freeze-dried strawberries. Repeat with the remaining strawberries.
  • Let the chocolate set, about 5 minutes, then serve.

Let's make homemade strawberry brownies! This recipe uses freeze dried strawberries in the batter for ease and texture, semisweet chocolate, and cocoa for plenty of flavor, and then the brownies are topped with a layer of chocolate ganache. Thick, decadent and delicious - exactly how a homemade chocolate brownies should be!

1 1/2 cup freeze dried strawberries (plus extra for garnish)
1/2 cup butter
6 oz semi sweet chocolate (about a heaping 1 cup)
1 cup granulated sugar
3 eggs (large)
2/3 rd cup all purpose flour
2 tbsp unsweetened cocoa
1/2 tsp kosher salt
6 oz semi sweet chocolate (about 1 heaping cup)
3 oz cream (a little more than 1/3rd cup)

Steps:

  • Preheat the oven to 350° F and line a 8x8 pan with parchment paper or spray with baking spray.
  • Using a spice grinder, small blender, or food processor, grind the 1 1/2 cups freeze dried strawberries until they are pulverized and almost powder like. It's ok if not all pieces are the same size. Set aside.
  • In a medium size microwavable safe bowl, melt the 1/2 cup butter and 6 oz chocolate together, 30 seconds at a time until fully melted. Add in the 1 cup sugar, 3 eggs, and 1 tsp vanilla. Mix on low to medium speed with a hand mixer or whisk by hand.
  • Add in the freeze dried strawberries, 2/3rd cup flour, 2 tbsp cocoa, and 1/2 tsp salt. Mix until combined.
  • Pour the batter into the prepared pan and bake for 28-30 mins until the edges of the pan start to break away. Cool.
  • Add the 6 oz of chocolate to a heat safe bowl, preferably shallow. In another small bowl, heat the 3 oz of cream in the microwave (30 second at a time, 2x should be ok), or over the stove top just until the edges start to simmer. Do not bring to a full boil or the cream will curdle.
  • Pour the cream over the chocolate and let it sit for 3 mins but do not stir it yet! After 3 minutes, stir with a spatula until smooth. When the brownies are cool, spread the ganache over the brownies. Chill for 10 mins in the fridge and garnish with more freeze dried strawberries.
