EASY FRIED PLANTAINS SLICES
So easy, that even the most novice cook can make this. And it is delicious! It is a typical delicasy in Southern Mexico, Central America and the Carribean. It is best to choose plantains (not bananas) that are yellow with black spots (as shown in the picture), as these will be sweet and tender and will fry even more delicious! Enjoy by itself with sour cream or as a side dish (as shown in the picture).

Steps:
- On medium high, heat oil in large frying pan.
- Meanwhile, cut each banana in half, across the middle (NOT lengh wise). Now take each banana half and cut 3 slices length wise. Do the same to the other half. You should end up with 6 slices about 2-3 inches long PER a banana. After you have done this with all 3 bananas, there will be a total of 18 slices.
- Add the sliced bananas slowly into the hot oil and fry each side for 3-5 minutes or until golden brown.
- Remove from pan, drain in paper towel and add salt to taste.

Steps:
- In a deep-fryer or heavy-bottomed pot, heat enough peanut oil to come halfway up the sides of the pot, to 350 degrees F.
- Peel the plantains and slice them into 1 1/2-inch chunks. Put the plantains into the fryer and fry until just golden brown, about 2 minutes. Stir the garlic and the water together in a medium bowl. Remove the plantains from the fryer and drain on a paper towel lined sheet tray. With the smooth side of a meat mallet, smash the plantain until it's flattened. Add them to the garlic water and let them soak for 1 minute. Remove the plantains from the water and pat dry with paper towels. Return to the fryer and continue to fry until golden brown and crisp, about another 2 minutes. Transfer the plantains to a serving bowl and season with salt. Serve hot.

TWICE FRIED PLANTAINS
Plantains are a member of the banana family, but catch them a little before they are ripe and they become a kid pleasing savory snack similar to French Fries. My 8 year old loved these, so we were pleasantly surprised when she gobbled them up. My daughter likes these sans sauce, but my Husband and I love them with Recipe #356610 This recipe is from Family Fun Magazine. Don't let all the steps scare you, they are very easy to make!
