EASY BREAKFAST FRITTATA RECIPE BY TASTY
Easy breakfast frittatas for all! While you refrigerate your egg mixture, fry up bacon, tomatoes, spinach, and onion - or really, whatever vegetables you have in the pantry or are in season. Mix everything together in an oven-safe pan, sprinkle with cheese, and bake for 15 minutes. Top this super simple meal with some chopped green onions and pair with a salad, some fruit, or (better yet!) a mimosa.

Steps:
- Preheat oven to 350°F (180°C).
- In a large bowl, whisk the eggs, heavy cream, salt, and pepper. Refrigerate until read to use.
- In an oven-safe pan, cook bacon. Once fully cooked, take out the bacon and set aside.
- Add onions to the same pan and cook until translucent.
- Add tomatoes and spinach ,and cook for a couple minutes until spinach is slightly wilted.
- Add the bacon back into the pan. Blend together.
- Add the eggs and cheese into the pan.
- Give it a good stir, then bake for 15 minutes, or until the eggs do not jiggle in the middle.
- Top off with green onions, if desired.
- Enjoy!

FRITTATA FOR TWO
My own recipe. Hearty frittata for two with broccoli. Very filling. The pancetta adds a lot of flavor, but you may omit for a still flavorful vegetarian version.

Steps:
- Preheat oven to 375 degrees F.
- Steam or microwave broccoli just until tender.
- In an oven safe skillet, saute onions and pancetta until onions are translucent. Add garlic. Saute for additional 2-3 minutes.
- Add broccoli to skillet and mix all ingredients well. Remove pan from heat.
- In a small bowl, lightly beat eggs and seasonings together.
- Pour egg mixture over skillet ingredients. Do not stir. Sprinkle cheese on top.
- Place skillet in oven and bake on center rack for 17-20 minutes.
- Slice into wedges and serve warm or cold.

- Note that just about everything here is optional.
- Use vegetables you like.
- Use the kind of cheese you like.
- And if you don't have leftover boiled potatoes, don't sweat it.
- The dish will just be a little less hearty.
- Preheat oven to 350F degrees.
- Spray a pie plate with Pam.
- Beat eggs in a fairly large bowl.
- Meanwhile, heat butter (or cooking oil, but butter tastes better) in a skillet and saute the veggies of your choice along with the garlic.
- When tender, scrape into the beaten eggs.
- Add the parsley, cheese (try swiss for a change, or even mozzarella) and seasonings and stir.
- Pour into prepared pie plate and bake for 20-25 minutes until set.

- Heat the oil and saute the sliced potatoes and onions a few minutes, stirring now and then but not constantly. You want everything cooked through, about 8 minutes, and for the potatoes to be a bit browned.
- Stir in the garlic and basil (or whatever herb you’re using). Pour the eggs over the potatoes and onion, sprinkle the cheese on top and salt and pepper. Cover the pan and cook over medium low heat until set, about 10 minutes.
- Slice the frittata onto a plate, then hold the pan over the top of the plate while you flip the plate upside down, so that the frittata ends up bottom side up in the pan. Return to the burner and cook a few minutes. Alternately, rather than flip it over you can slide the pan under a preheated broiler for 2-3 minutes until the top is lightly browned. Let it sit a few minutes at least. Then slice and serve.
