HOME-FRIED CHEESE STICKS
These is an easy, cost-efficient way to make home-made fried cheese sticks. Taste just wonderful, light crispiness. More for your dollar and easily stored in the freezer for when you have a craving. I make 2 batches, one for the 'now' and one for later. Serve with your favorite dipping sauce.

Steps:
- Remove string cheese sticks from plastic wrappings and cut the strings in half crosswise.
- Line a baking sheet with parchment paper. Place eggs in a bowl and bread crumbs into a large shallow bowl.
- Dip cheese stick halves into egg and roll in bread crumbs to completely coat the sticks; place breaded cheese sticks onto the prepared baking sheet. Allow cheese sticks to stand at room temperature for about 5 minutes to set, and repeat dipping in egg and bread crumbs to form a thick coating. Freeze breaded cheese sticks for at least 2 hours.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Deep fry cheese sticks, a few at a time, until the coating is golden brown and crisp and the cheese is soft, 5 to 8 minutes. Let sticks drain on paper towels; cool slightly and serve warm.

FRIED CHEESE
This fried cheese is such a treat. There's a delicious mixture of cheeses that give these little cheese bites great flavor and a gooey texture. Dipped in marinara they make a great party appetizer or treat for game day.

Steps:
- 1. In a large mixing bowl, combine ricotta, mozzarella, Asiago, and Parmesan cheeses.
- 2. Add the egg and Italian seasoning. Mix well with clean hands.
- 3. In a medium-sized skillet, heat oil over medium-high heat.
- 4. While the oil is heating, take tablespoonfuls of the ricotta mixture and form into a 1 to 2-inch balls.
- 5. Lightly roll the cheese balls into the Italian bread crumbs and then lightly into the Panko bread crumbs.
- 6. Carefully place the cheese balls into the oil in small batches. Do not overcrowd the skillet.
- 7. Let cook for about 1 to 2 minutes, then carefully flip the cheese balls over with a slotted metal spoon.
- 8. Once the cheese balls have a golden brown color, remove them using the slotted spoon.
- 9. Place on a paper-towel-lined plate to drain excess grease. Serve warm with warm marinara sauce.
FRIED CHEESE
An extremely tasty new way to eat cheese! Very easy and quick to make. It tastes like a warm, buttery Cheese-It. Is very healthy but doesn't taste like it!

Steps:
- Spray a cooking pan with PAM spray.
- Set heat to medium-high.
- Sprinkle the 1/2-1 cup of cheese onto pan, (make sure cheese is evenly spread out into a circular shape).
- When cheese is bubbling a lot and the edges have a golden/brown color flip the cheese over like a pancake.
- (This side takes a lot less time to cook so moniter it carefully).
- When both sides have a golden/brown color, take out of pan to serve.
EASY HOMEMADE FRIED CHEESE
Fried cheese is the perfect game day party food.

- Place the flour in a bowl, Panko in a bowl and mix the egg with milk in yet a separate bowl. Dip mozzarella sticks in the flour, tapping to remove excess, then the egg and finally the Panko. Place on a baking sheet. Repeat with each cheese stick, pressing the Panko gently to make it stick. (You may need to add a bit more Panko if it becomes too wet and doesn't stick.) You need to make sure the cheese is coated well.
- Once you have all of your cheese sticks dipped and dredged and on the baking sheet, place in the freezer for about 20 minutes. This will really make the coating stick so don't rush or skip this part. About 5 minutes before they are ready to come out of the freezer heat about 1 1/2 inches of oil in a frypan. In a small saucepan, heat the marinara sauce.
- Once the oil is hot, gently place frozen cheese sticks into the oil, a few at a time so as not to crowd the pan or cool the oil too much. Turn them with tongs to keep them from burning. They should be golden brown.
- If the cheese starts to ooze out it's time to remove them to a paper towel-lined plate. They should be fried no longer than about 3 - 4 minutes total. They were not stringy like I've had in restaurants but delicious all the same.

FRIED MOZZARELLA CHEESE STICKS

- In a small bowl, mix the eggs and water.
- Mix the bread crumbs and garlic salt in a medium bowl. In a medium bowl, blend the flour and cornstarch.
- In a large heavy saucepan, heat the oil to 365 degrees F (185 degrees C).
- One at a time, coat each mozzarella stick in the flour mixture, then the egg mixture, then in the bread crumbs and finally into the oil. Fry until golden brown, about 30 seconds. Remove from heat and drain on paper towels.

- Line a baking sheet with parchment paper or waxed paper.
- Pour bread crumbs, Parmesan cheese, and Cheddar cheese into 3 separate piles on the prepared baking sheet. Combine milk and egg in a bowl and stir until well combined.
- Roll cream cheese into 1-inch balls. Split each ball in half and place sharp Cheddar inside of cheese ball; put it back together and shape cream cheese around the Cheddar cheese. Roll it in Parmesan and Cheddar cheeses until the outside is completely covered. Dip in the milk mixture and roll in bread crumbs until completely covered. Repeat with remaining cream cheese balls.
- Heat oil in a large saucepan to 350 degrees F (175 degrees C). Drop cheese balls in the hot oil and allow to get brown on all sides, 3 to 5 minutes. Drain on paper towels.
