BUTTERNUT SQUASH MASH



Butternut Squash Mash image

Serve your family with this flavorful baked butternut squash - a perfect side dish.

Number Of Ingredients 9

3 large butternut squash (about 3 1/2 to 5 1/4 lb each)
2 small bulbs garlic
1 tablespoon olive oil
2 tablespoons butter
1/2 cup half-and-half
1 tablespoon finely chopped fresh sage leaves
2 teaspoons salt
1 teaspoon freshly ground pepper
Additional fresh sage leaves, if desired

Steps:

  • Prick each squash with paring knife. On microwavable plate, microwave squash, one at a time, on High 4 to 5 minutes. Carefully cut squash in half lengthwise, using chef's knife; discard seeds and membranes. Line 2 large cookie sheets with foil; spray foil with cooking spray. Place squash halves, cut sides down, on cookie sheets.
  • Heat oven to 350°F. Cut off pointed ends of garlic bulbs. Place garlic on sheet of foil; drizzle with oil. Fold foil tightly to seal; place on 1 cookie sheet with squash.
  • Place 1 cookie sheet on upper oven rack and 1 on lower oven rack. Bake 1 hour, switching positions after 35 minutes. Cool 10 minutes.
  • Scoop out squash from shells and place in large bowl; cover to keep warm. Squeeze garlic from bulbs into small bowl; mash with fork.
  • In 1-quart saucepan, melt butter over medium heat. Stir in half-and-half, chopped sage, salt and pepper; heat to simmering. Remove from heat. Add butter mixture and mashed garlic to squash. Beat with electric mixer on medium speed until smooth. Garnish with sage leaves.

A friend phoned me this evening, asking how to do squash (she hasn't been cooking at home for long; she's always been a takeout kind of gal). So, here is the method I use, for everyone who wondered how but were afraid to ask. Go for it -- it's easy and delicious!

Number Of Ingredients 4

1/2 lb small winter squash, such as hubbard or butternut
2 tablespoons unsalted butter, room temperature
1 pinch freshly grated nutmeg
salt and pepper

Steps:

  • Pierce the squash in several spots with a fork or skewer.
  • Place on a microwave-safe plate and place in the microwave; cook on High until squash is soft, about 8 minutes.
  • Alternatively, you can do this in the oven: poke it as above, and roast at 400F for about 45 minutes.
  • Cut cooked squash in half, scoop out and discard seeds, then scoop all the flesh into a mixing bowl.
  • Add the butter and nutmeg, and mash well.
  • Taste; add salt and pepper if desired; serve.
  • A wee bit of cream can also be added when mashing, if you're feeling decadent.

1 onion, finely chopped
3/4 cup Miracle Whip
3 cups cooked very well drained and mashed hubbard squash (you'll need 2 1-kg. bags,or 2 1-lb. bags of frozen squash) or 3 cups butternut squash (you'll need 2 1-kg. bags,or 2 1-lb. bags of frozen squash)
1/4 cup all-purpose flour
1 tablespoon brown sugar
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon nutmeg
1/4 teaspoon black pepper
3/4 cup fresh breadcrumb
2 tablespoons melted margarine

Steps:

  • Saute onin in a small amount of Miracle Whip dressing until tender.
  • Combine all ingredients except bread crumbs and margarine.
  • Spoon into a greased 6 cup casserole.
  • Combine bread crumbs and melted margarine; sprinkle over squash.
  • Bake at 375 degrees for 40 minutes or until golden.

I have fond memories of my dad cutting up a hulking big blue Hubbard squash on the kitchen counter and cooking it in order for Mom to make the pies. A more manageable butternut squash will deliver an equally delicate-tasting pie! -Patti Ann Christian, Ararat, North Carolina

1 sheet refrigerated pie crust
1 large egg
1-1/2 cups mashed cooked Hubbard or butternut squash
1 can (12 ounces) evaporated milk
1 cup sugar
2 tablespoons molasses
1 tablespoon cornstarch
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
Optional: Sweetened whipped cream and additional ground nutmeg

Steps:

  • Preheat oven to 400°. Unroll crust into a 9-in. pie plate; flute edge. In a large bowl, whisk together egg, squash, milk, sugar, molasses, cornstarch and salt. Pour into the crust; sprinkle with nutmeg., Bake pie on a lower oven rack 10 minutes. Reduce oven setting to 325°; bake until a knife inserted in the center comes out clean, 45-50 minutes. Cool on a wire rack; serve or refrigerate within 2 hours. If desired, top with sweetened whipped cream and additional ground nutmeg.
