OVEN-BAKED HONEY BBQ CHICKEN LEGS
This sweet, sticky, juicy oven-baked BBQ chicken is the perfect easy weeknight recipe. Chicken drumsticks and thighs are surrounded by a simple 4-ingredient homemade BBQ sauce and baked to heavenly perfection.

Steps:
- Remove chicken from fridge and let stand at room temperature while you mix the sauce. Preheat oven to 425ºF.
- Line a large baking sheet with parchment paper or aluminum foil. Measure all remaining ingredients directly onto baking sheet and stir to combine. Add chicken and turn to coat evenly, rubbing some sauce under the skin.
- Bake in centre of oven for about 45 minutes, covering with foil about halfway through, until centre reaches 165ºF.

Steps:
- In a medium saucepan over medium-high heat, warm the vegetable oil. Add the garlic and cook for 1 minute.
- Add the remaining sauce ingredients and bring to a boil.
- Reduce heat and simmer about 15 minutes. Set aside. Pour 1/2 of the sauce in a small bowl for basting the chicken.
- I like to pound the chicken a little before I grill it so it cooks evenly. Grill the chicken on medium high heat, you want to cook it 7 to 10 minutes on each side. It tastes best if you only turn it once.
- Baste generously with the small bowl of sauce every 3 or 4 minutes. Serve with the remaining sauce on the side for dipping.

- Pat chicken dry. Combine rub ingredients. Rub over chicken pieces; refrigerate, covered, in a shallow dish 2 hours., Meanwhile, in a small saucepan over medium heat, combine sauce ingredients, adding cayenne if desired. Bring to a boil, stirring constantly; reduce heat and simmer, uncovered, to allow flavors to blend, 8-10 minutes., On an oiled grill rack, grill chicken, covered, over indirect medium heat, turning frequently, until a thermometer reads 165°, 35-45 minutes., Reduce heat to medium-low. Brush chicken with sauce, reserving 1/2 cup. Cook, covered, until chicken pieces register 170°-175°, 4-6 minutes. Serve with reserved sauce.

- Preheat oven to 425 degrees F. In a large resealable Ziploc bag, combine flour and chicken. Shake until fully coated. Set up a dredging station: In one bowl, add panko breadcrumbs and in another bowl whisk eggs and add 2 tablespoons water. Dip chicken in beaten eggs, then panko until fully coated. Transfer to a parchment-lined baking sheet and season generously with salt and pepper. Bake until golden and crispy, 20 to 25 minutes. Meanwhile, in a small saucepan over low heat, warm barbecue sauce, brown sugar, lime juice, and garlic powder. Coat baked chicken in sauce and serve with ranch, if desired.
