HOT BACON DRESSING
Steps:
- Cook the bacon, reserving ¼ cup of the fat and chopping the bacon.
- Add the reserved fat back to the skillet over medium low heat, stir in the remaining ingredients and bring to a low simmer until slightly thickened. Stir in the bacon and serve.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.
- In a medium skillet, add the crumbled bacon and pour the vinegar mixture over it. Cook over medium heat, stirring constantly, until mixture thickens.

- Remove the bacon from the grease and set aside on a plate covered with paper towels to absorb excess oil so that it continues to crisp. Once it has cooled to the touch, crumble into smaller pieces.
- Keep 1/3 cup of the bacon grease in the skillet and remove the rest if there is any excess. It should render approx 1/3 cup.
- Add the fresh minced garlic and chopped onion to the skillet and saute in the bacon grease until the onion is translucent.
