Six simple ingredients come together to make these delicious and easy lemon blueberry bars.

Ingredients

1 box white cake mix
2 eggs
1/2 cup vegetable oil
1 cup blueberries, rinsed
3/4 cup lemon juice
1 cup confectioner's sugar

Steps:

Preheat the oven to 350°
Line with parchment paper or grease a 9x9 baking dish
In a large bowl, beat the eggs and oil together.
Beat in the white cake mix.
Fold in the rinsed blueberries.
Spread evenly into prepared baking dish.
Bake for 35-40 minutes. Check the center with a toothpick for doneness.
Remove from the oven and allow to cool completely before glazing.
To prepare glaze, combine the lemon juice4 and the confectioner's sugar until smooth.
Pour over cooled cake.

Ingredients

-1 box lemon cake mix
-1 cup plain yogurt
-3 eggs
-1/2 cup butter
-1/4 cup water
-1/4 cup lemon juice
-1 cup blueberries
-1 container of white icing
-juice and zest of half a lemon

Steps:

Preheat oven to 350.
Mix together 1 box lemon cake mix, 3 eggs, 1/2 cup melted butter, 1/4 cup water, 1/4 cup lemon juice
Add in 1 cup plain yogurt and 1 cup fresh blueberries.
Pour the batter into a well greased baking dish and bake in the oven at 350 for 45 minutes.
Remove cake from over and let cool.
Flip cooled cake over onto a tray and ice it, or cut into bars and ice individually using the lemon icing.
Garnish with lemon zest and a few fresh blueberries.
Enjoy!
While the cake is baking you can prep the icing. Whisk together 1 container of white icing with the juice and zest of 1/2 a lemon. Set aside.

Cream together butter, sugar and lemon zest in a bowl. Add the egg and vanilla extract and whisk till combined.
In another bowl, whisk together 1 3/4 cup flour, salt, baking powder and baking soda. Add this to the wet ingredients, along with yogurt. Whisk till just combined.
