1 pound pork tenderloin, cut into 1-inch cubes
2 tablespoons soy sauce
2 tablespoons olive oil
1 tablespoon brown sugar
2 tablespoons white vinegar
2 cloves garlic
Sea salt and ground black pepper
1 teaspoon cayenne pepper
1 teaspoon dried oregano
2 cloves garlic
1/2 teaspoon ginger
8 small mushrooms
1 red onion
1 zucchini
8 cherry tomatoes

Steps:

  • Toss all the ingredients in a ceramic bowl; let it marinate for 1 hour.
  • Select the "Roast" function and adjust the temperature to 360 degrees F.
  • Lightly grease the air fryer oven perforated pan with olive oil.
  • Thread bamboo skewers, alternating with pork and veggies.
  • Place the skewers in the air fryer oven perforated pan.
  • Roast them for about 25 minutes, rotating them once or twice.
