When I need to make a treat on a moment's notice, this is the recipe I reach for. The brownies cook up quickly in the microwave.-Marie Peart, Hagersville, Ontario

1 cup sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 cup butter, melted
3/4 cup all-purpose flour
1/2 cup baking cocoa
1 cup chopped walnuts

Steps:

  • In a bowl, beat sugar, eggs, vanilla and salt on medium speed for 1 minute. Add butter; beat until blended. Combine flour and cocoa. Gradually add to sugar mixture; mix well. Stir in walnuts. Transfer to a greased microwave-safe 8-in. square dish. Microwave, uncovered, on high for 3-4 minutes, rotating every 1 minute or until a moist area about 1-1/4 in. in diameter remains in the center (when touched, brownie will cling to your finger while area underneath will be almost dry). Cool on a wire rack. Cut into bars.

Company dropping by in 10 minutes? Craving something sweet pronto? Or need a quick potluck dessert? This chocolate-y, moist, fudgy microwave brownie recipe will do the trick.

2 ounce (40g) unsweetened dark chocolate Note 1
1/2 cup (113g) butter ((1 stick))
3/4 cup (170g) sugar
2 eggs
3/4 cup (96g) flour
1/2 teaspoon baking powder
1/2 teaspoon vanilla
1/4 teaspoon salt if using unsalted butter
1/3 cup (53g) semi-sweet or dark chocolate chips (recommended) (makes brownies extra fudgy)
1/2 cup (75g) chopped walnuts

Steps:

  • Instructions are for a 1200 watt microwave oven. Adjust accordingly - see Note 2.
  • MELT CHOCOLATE AND BUTTER: Microwave butter and chocolate for 1 1/2 minutes on High in a measuring cup or bowl. Stir until melted and smooth.
  • MAKE BATTER: In a separate bowl, use a fork or whisk to mix sugar and eggs together. Add flour, vanilla, baking powder, salt if using and mix to combine. Stir in chocolate-butter mixture. Stir in chocolate chips or nuts if using.
  • MICROWAVE TO COOK: Pour batter in a microwaveable dish - approximately 8 x 8 x 2 -sprayed with oil. Place a small plate or saucer upside down on the microwave turntable/floor. Then place dish on top of the inverted plate. Microwave for 3 minutes 10 seconds to 3 minutes 30 seconds. Note 2. If microwave turntable doesn't turn automatically, stop and turn the dish once or twice, then continue cooking. Don't over bake. You can always add more time if needed. How to tell if brownies are done, Note 3.
  • SERVE: Let brownies cool for 10 minutes. Serve semi warm if desired with ice cream, berries, whipped cream or dusted icing/confectioner sugar.

1/2 cup (1 stick) unsalted butter
3 ounces unsweetened chocolate
2 large eggs
1 cup sugar
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup chocolate chunks or chips
Nonstick cooking spray

Steps:

  • Put the butter and chocolate into a microwave safe bowl and heat on high for 1 to 2 minutes, stirring every 30 seconds to melt the chocolate. Set aside.
  • In another bowl, whisk together the eggs and sugar.
  • In a large bowl sift the flour with the baking powder and salt. Add the egg and chocolate mixtures along with the vanilla and stir well to combine.
  • Spray an 8 by 8 by-2-inch microwave safe glass pan with cooking spray. Pour the batter into the pan, spread it out evenly, and scatter the chocolate chunks on top. Cook on high for 5 minutes. Remove from the oven and let rest for 3 minutes before cutting and eating.

  • Cream sugar and butter together.
  • Add eggs and vanilla, mix well.

  • Grease a GLASS pie pan and then coat with sugar.
  • Pour brownie mixture into sugared pie pan.
  • Microwave 4&1/2- 5 minutes.
  • Let sit until cool.
  • Optional:To sprinkle powder sugar over the top of the brownie.

1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup butter, melted
3/4 cup flour
1/2 cup cocoa

Steps:

  • Beat eggs until light (about 1 minute on high).
  • Beat in sugar and salt. Add the vanilla. Mix in the melted butter.
  • Add the cocoa and flour using the low speed on mixer.
  • Pour into a microwave safe dish (8 x8 or a round cake pan -- your microwave time will depend on what you use.).
  • Microwave on high for 3 to 5 minutes on a turntable, preferably. Do not let the center get totally dry or it will be overcooked. I took mine out when there was just a small moist spot in the center, but next time I will probably let it bake for maybe 10 seconds less. It finishes cooking as it cools.
  • You can frost if you like, but I prefer my brownies unfrosted.
