Soft and pillowy naan is easy to make at home, and it's a world apart from store-bought.

Yield 6 naans

Steps:
- In a large bowl, whisk together the flour, sugar, yeast, salt and anise seeds (if using). Set aside.
- In a medium bowl, whisk together, the yogurt, olive oil, and ¾ cup warm water (about 100°F). Add the yogurt mixture to the dry ingredients and mix with a fork. When the dough is about to come together, dust your hands with flour and knead gently into a soft, slightly sticky dough (sprinkle more flour, little by little, if the dough is too wet to work with). As soon as it comes together, stop kneading.
- Lightly oil or spray a clean bowl with nonstick cooking spray (the bowl should be large enough to allow the dough to double in size). Transfer the dough to the prepared bowl and cover with plastic wrap or a damp kitchen towel. Let sit in a warm place for 1 to 1.5 hours, or until about doubled in size (hint: the warmer the spot, the faster the dough will rise).
- Fill a small bowl with about ½ cup flour. Dust a work surface with some of the flour and dump the dough on top. Sprinkle some of the flour on top of the dough and on your hands. Shape the dough into a long rectangle and cut into 6 equal portions, dusting with more flour as necessary so the dough doesn't stick. Roll each portion of dough in the bowl of flour to keep them from sticking.
- Warm a large cast iron or heavy nonstick pan over medium-high heat until very hot. Using a rolling pin, roll one of the dough balls into an oval shape about ⅛-inch thick (it should be about 9 x 4 inches). Pick up the dough and flip-flop it back and forth between your hands to release any excess flour; then gently lay the dough in the dry skillet and cook until the top is bursting with air bubbles and the bottom is golden and blackened in spots, a few minutes. Flip the naan and cook about 1-2 minutes more until the the bottom is lightly browned and blistered in spots. Remove the naan from the skillet and brush with melted butter. Place the naan in a tea towel-lined dish to keep warm. Repeat with the remaining naans, adjusting the heat lower if necessary as you go (I usually find it necessary to lower the heat to medium after the first naan). Sprinkle with parsley, if using, and serve warm.
- To keep the cooked naan warm, place them in a 200°F oven. Store leftovers in a Ziplock bag and reheat in a 350°F oven wrapped in foil.
- Note: I use King Arthur flour, which is higher in protein than some other all-purpose flours. If using a flour with a lower protein content, such as Gold Medal, you will likely need to add a few more tablespoons of flour.
- Note: Active dry yeast may be used instead of instant/rapid-rise yeast, however, the dough will take longer to rise. To give active dry yeast a boost, you can dissolve it in the lukewarm water and let it sit until frothy, about 10 minutes. After that, add it to the flour, sugar, salt, and anise seeds, and proceed with the recipe.
- Freezer-Friendly Instructions: The naan can be frozen for up to 3 months. Once it's completely cooled, wrap each piece securely in plastic wrap and put all the rounds in a sealable plastic bag prior to putting in the freezer. To reheat, wrap the naan in aluminum foil and warm in a 350°F oven until hot.

Steps:
- In the bowl of a stand mixer, place the all purpose flour, whole wheat flour, baking powder, salt and sugar. Mix until combined.
- To the dry ingredients, add the oil, water and milk. Using the dough hook of your stand mixer, mix and knead the dough for about 7 to 10 minutes until the dough comes together and is not sticky anymore. The dough should be soft and not hard at all. If it feels hard, add one to two tablespoons of water and knead again.
- Cover the bowl with a kitchen towel and let it sit for 20 minutes.
- Transfer the dough to a lightly floured surface and divide it into 8 pieces. Shape each piece to a ball and roll it out gently with a rolling pin into a disk with 1/4 inch thickness.
- Heat a cast iron skillet (or a non stick skillet) over medium heat.
- Once the skillet is hot, brush the naan on top with melted ghee. Transfer the naan to the skillet, ghee side down and cook for about 30 seconds until it's golden and has bubbles. Brush the top with ghee and flip so it cooks on the other side as well. This should take about 30 seconds or less.
- Once the naan is cooked, transfer to a plate and cover with a kitchen towel so it stays soft. Continue with the remaining dough.
- Serve with your favorite main dish.

Steps:
- Combine warm water, sugar, and yeast in a bowl. Let stand for 5 minutes until foamy.
- Add salt and flour. Mix thoroughly. Knead dough on a floured workspace about 20 times and form into a tight ball. Put dough in a well oiled bowl and cover with a damp towel.
- Put in a warm place to rise for 30-45 minutes. Dough won't rise much, but it doesn't need to.
- Turn dough out onto a floured workspace. Divide dough into 8 pieces and roll out with a rolling pin to about 1/8" thick.
- Grill naan pieces on a grill or electric griddle. In a pinch, a frying pan sprayed with some nonstick cooking spray will work. Grill for 1-2 minutes on each side.
- This recipe yields a very soft, chewey naan. Just the way I like it!

Steps:
- In a mixing bowl take ¼ cup fresh curd or yogurt. For a vegan naan, use almond or cashew yogurt.
- Add 1 teaspoon sugar, 1 teaspoon baking powder and 1 pinch baking soda.
- Mix all the ingredients very well till the sugar dissolves.
- Now add 2 cups all-purpose flour (maida), 1 teaspoon salt or add as required.
- Mix again with a spoon so that the salt is evenly distributed in the flour.
- Make a well in the center and add 2 tablespoons oil. Note that you can even add butter instead of oil.
- Add ¼ to ⅓ cup water or add as required.
- First mix and then begin to knead.
- Knead to a smooth and soft dough. If the curd is thick, then you may need to add some more water. In case the dough looks dry, then add some more water and knead. If it becomes sticky, then sprinkle some flour and knead again. You should get a soft stretchy dough.
- Flatten the dough and spread some oil all over the dough. Place in the same bowl.
- Place a moist kitchen towel or napkin completely covering on the dough. Cover the bowl with a lid and let the dough leaven for 2 hours.
- Make medium-sized balls from the dough.
- Flatten slightly and sprinkle some flour on the dough as well as on the rolling board.
- Sprinkle some onion seeds or sesame seeds (black or white) or melon seeds on the rolled dough.
- Roll into a 6 to 7 inches elongated circle.
- Roll the top side to get a tapering edge. You can even gently pull the dough with your hands to get this pointed edge. The naan will have a tear-shaped form.
- Heat a skillet or tawa or griddle and keep it on medium-high to high flame. Place the naan bread ready on the hot tawa or skillet or griddle.
- Keep the flame to medium-high or high and begin to cook the naan bread.
- Let one side get partly cooked. You will see some air pockets on the naan.
- When you start seeing the air-pockets, then flip.
- Now cook the second side on medium-high to high flame.
- Again you will see air-pockets appearing on the second side.
- Flip when you see many air-pockets on the naan and place naan directly on the stovetop flame.
- Grill the first side on the flame till you see some charred spots and blisters.
- Also, roast the edges.
- Turn over and roast the second side too till you see some charred spots.
- Place it on a plate or tray. Spread or brush with some softened butter or melted butter. You can even use ghee (clarified butter or oil for a vegan version. You can even skip using butter or oil entirely.
- Heat the griddle or skillet on a high flame. Place the naan on the hot griddle or tawa.
- You will see some air pockets on the naan.
- Flip the naan bread.
- Cook the second side more than the first side. Please note that on a high flame they will get cooked faster.
- Press the edges with a spatula so that they are also roasted and cooked properly.
- Flip again.
- You can flip again and press the edges for even cooking. Remove and spread some butter or oil. Serve hot. This way make naan with any of the methods. You can even stack cooked naans in a casserole box or roti basket and serve later.
- Serve the naan bread hot or warm with your favorite curry dish - malai kofta or palak paneer or matar paneer or lentils like dal tadka or dal makhani or chole masala or rajma masala or dal bukhara.

Steps:
- Before you start, keep in mind that this is a yeast-free, oil-free naan. It means that the texture won't be as soft and fluffy as the classic recipe. It is a denser and chewier bread but a delicious Vegan Naan option for any curry.
- In a large mixing bowl, stir flour, baking powder, and salt. Make a well in the center of the flour and stir in the non-dairy yogurt.
- Mix with a spatula, then get your hands in the dough to knead for a few seconds until the dough is combined and slightly sticky dough forms. Add 1-4 extra tablespoons of flour if needed until the dough is soft, not sticky, and you can form a ball.
- Return dough ball to the mixing bowl, cover the bowl with a towel and set aside at room temperature for about 15-30 minutes
- Sprinkle the work surface with flour, then place the dough ball on the surface. Sprinkle some more flour on top of the ball, and knead for 30 seconds until smooth.
- Dust the benchtop with more flour, cut the dough ball into 4 pieces. Roll each slice into a ball, then roll them with a rolling pin into a 1/4-inch / 0.6-cm thick round/oval shape.
- Preheat a non-stick saucepan under medium-high heat for 1 minute, don't add oil.
- When hot, add the rolled dough and cook for 3 minutes on one side, then flip and cook for an extra 1-2 minutes on the other side.
- Repeat these steps until all Vegan Naans are cooked.
- Brush each cooked bread with vegan butter or coconut oil.

EASY NAAN BREAD WITHOUT YEAST
Steps:
- Put flour, salt and nigella seeds in a bowl and give them a bit of a whisk with a fork or balloon whisk.
- Add yogurt and start mixing it into the flour mixture with your hand adding some lukewarm water bit by bit as you mix. Only add enough water to make your dough come together. You might not need the entire 115ml / 1/2 cup. It will depend a lot on the flour you are using too.
- You will get nice and flexible dough that is slightly rough and sticky. You will not need to knead it for a long time only to bring it together to shape a ball. Put the dough ball back in a bowl and cover with clean tea towel and leave to rest for anything between 30-60 minutes (however much time you've got). The dough will not raise during this time as there is no yeast.
- Take the dough ball out of the bowl and put on a kitchen counter dusted lightly with flour. Divide the dough into 8 equal size balls. Flatten each ball with the palm of your hand and stretch it lightly into the oval shape 15-18 cm long.
- Cook your naans under the hot grill for about 2 minutes on each side, until they puff up and start to brown slightly. Timings might differ depending on your grill and the size of your individual naans. Feel free to cook them in a frying pan instead (see tips above).
- Keep cooked naan bread wrapped in a clean kitchen towel as you cook the remaining ones. This will keep them soft until you're ready to eat them.
- Prepare Coriander & Garlic Butter by gently melting the butter in the microwave or in a small pan on the hob. Once melted add chopped coriander and minced garlic and mix well. Brush the mixture over hot naans.
- Enjoy with your favourite curry!

Steps:
- Put the flour in a large bowl, then add the sugar, baking powder and 1½ tsp salt. Add the seeds, if you like. Lightly whisk to disperse the ingredients evenly throughout the flour.
- Add 1 tbsp of the melted butter, followed by the natural yogurt. Mix together with your hands. Once the yogurt and butter have been absorbed, gradually add 180-200ml water, 50ml at a time. Mix between additions, until it begins to come together into a dough. The water amount will depend on the consistency of the yogurt and butter - stop adding when you have a ball of dough.
- Tip the dough onto a lightly floured work surface and knead thoroughly for 5 mins until smooth and elastic. Put in an oiled mixing bowl, cover with a tea towel and leave to rest for at least 1 hr. The dough will not rise but it is important to let it rest as this helps to make the naans less chewy and more fluffy.
- If making the garlic butter, mix the garlic with the remaining 1 tbsp melted butter and the coriander. Set aside.
- Divide the dough into eight, 10 or 12 even-sized pieces, depending on how big you want the naans. Roll into round balls, then return to the bowl, covered with a tea towel.
- Roll one of the dough balls out on a lightly floured surface into a round, oval or teardrop shape - roll with a diagonal motion to get an oval. Flip the dough over and repeat on the other side.
- Heat a frying pan. Dry fry the dough over a medium high heat until it begins to puff up and the underside browns in places. Flip and repeat on the other side. Remove the cooked naan from the pan. Spoon a little of the garlic butter over the naan, if using. Sprinkle over some coriander, if you like. Cover with a tea towel while you repeat the process with the remaining balls of dough.

NAAN RECIPE NO YEAST
Steps:
- Combine flour, baking powder, baking soda, sugar and salt to the stand mixer. Using the dough hook, mix the ingredients for 30 seconds on low speed. Alternatively, add the ingredients to a large bowl and mix well.
- Add 1 tablespoon of oil and all of the yogurt, and mix into the flour. Add ¼ cup water and start kneading on low speed, scraping the sides of the bowl. Add more water if needed, a tablespoon at a time. Knead for 2-3 minutes until you get a soft and stretchy dough.
- Add the remaining 1 teaspoon of oil and knead for another 30 seconds. If the dough looks sticky, add a teaspoon or two of flour.
- To rest and proof the dough, add it to the Instant Pot steel insert and set the yogurt mode for 30 minutes and cover with a glass lid. Or, you can simply cover the mixing bowl with a damp kitchen towel and set aside in a warm corner for 1 hour.
- Dust your hands with flour and transfer the dough onto a flat surface. Using a bench scraper or a chef's knife, divide the dough into 6 equal parts for large-sized naans or 8 equal parts for medium. Roll each dough ball in your palms to make a smooth ball.
- Using a rolling pin, apply gentle pressure and roll each dough ball into a large oval shape, about 8-inches long and ¼-inch thick, using as little flour as possible. If using nigella seeds, spread a few on top and roll once more to press them into the naan.
- Heat a non-stick skillet on medium-high heat. When hot, using a pastry brush, spread some water in the pan. Place the naan, topping side up, and let it cook till large bubbles start to form (about 1 - 1½ minutes).
- Flip the naan and cook on the other side for another 1 - 1½ minutes. Remove naan and brush with some melted butter or oil. Enjoy warm with your favorite Indian curry.

- In a large bowl, whisk together the flour, salt, and instant yeast. In a medium bowl or a liquid measure, stir or whisk together the water and yogurt. Add the yogurt mixture to the flour mixture and stir to combine with a spatula. When the mixture becomes too stiff, knead with your hands for about a minute or until the flour is incorporated and you have a sticky, wet ball. Cover with a towel or cloth bowl cover, and let rise in a warm spot for 1 to 1.25 hours. (See notes above for creating warm spot. See notes above for making dough ahead of time.)
- Turn dough out onto a lightly floured work surface. Divide into 4 equal portions, then shape each into a ball. Let rest for 5 minutes.
- Heat a large skillet (something like cast iron is great) over high heat. You want it very, very hot. Using a rolling pin dusted in flour, roll one ball into a thin large round or oval (8- to 9-inches in diameter, roughly), using flour as needed to prevent sticking. Repeat with another round. (I like to start with 2 rounds rolled out; then I roll the remaining 2 while the first 2 are cooking.)
- When the skillet is very hot, transfer rolled out round, dusting off excess flour if possible, to the skillet. Cover. Cook for 1 minute. Close to the end of the minute, you’ll hear the pan hissing a bit … this is a good sign. Flip, and cook for another 30 seconds uncovered. Transfer to a plate and brush the top lightly with melted butter.
