Steps:
- Make the sauce: in a medium saucepan, combine all the sauce ingredients; bring to a boil.
- Decrease heat and simmer for 15 minutes, stirring occasionally.
- Remove from heat and let cool to room temperature.
- Pour some of the sauce into a small bowl to use for basting the ribs.
- Let the ribs stand at room temperature for 20-30 minutes before grilling.
- Season ribs with salt and pepper; follow your grill's manufacturer's instructions for using wood chips.
- Grill over Indirect Medium heat for 1-1 ½ hours, until the meat is tender, turning once halfway through grilling time.
- During the last 20 minutes of grilling time, baste with the small bowl of sauce.
- Serve warm with the remaining sauce on the side.

Steps:
- Remove any excess fat from the ribs and season the ribs with salt and fresh ground pepper to taste.
- Heat the oil in a large nonstick frypan to hot, add the ribs and brown well on all sides; about 5 to 8 minutes. Remove ribs to a plate and keep warm. Reduce heat and add wine, deglaze pan, releasing the brown bits.
- Mix together in a bowl, the rest of the ingredients for the sauce, except the spinach, reserve for later. Add to the wine in the frypan. Stir together and bring to slow simmer then add the browned ribs. Cover and simmer for 1 hour. Remove from heat and stir in the spinach.
- In the meantime, cook the noodles according to the package instructions; drain well.
- Pour ribs and sauce into a large pasta bowl; add the drained noodles, carefully stir to combine.

- In a bowl, combine the first 10 ingredients; mix well. Pour 1-1/2 cups marinade into a large resealable plastic bag; add the ribs. Seal and turn to coat; refrigerate for at least 4 hours. Cover and refrigerate remaining marinade., Drain and discard marinade from the ribs. Grill, covered, over indirect medium heat for 20 minutes on each side. Meanwhile, in a saucepan, combine the honey, brown sugar and reserved marinade. Bring to a boil; cook and stir for 2 minutes or until slightly thickened., Baste ribs with some of the sauce. Grill 15-20 minutes longer or until a thermometer reads 160°, turning and basting occasionally. Serve with the remaining sauce.

Steps:
- Preheat oven to 250˚F (125˚C).
- Clean the ribs (remove membrane or score) and pat dry.
- Place the ribs in a foil-lined roasting pan, and season both sides with salt and pepper.
- Add about ¼ inch (6mm) of water (about ½ cup (120 ml)) to the pan.
- Seal the top of the roasting pan with foil and bake for 2 hours or until ribs are very tender.
- Place wine, brown sugar, vinegar, tomato sauce, tomato paste, and allspice in a saucepan.
- Simmer the sauce for at least 45 minutes and season to taste. The sauce should be rich and thick.
- Raise oven to 350˚F (180˚C).
- Remove ribs from roasting pan. Pour off all fat and water, and baste ribs with sauce.
- Bake an additional 20-30 minutes. (You can stop and re-baste halfway through.)
- Cut ribs and serve with additional sauce.

- In a small bowl, stir together the Badia seasoning with the sugar, paprika, and cayenne pepper. Set aside.
- Place the pork ribs on a large cutting board and remove the membrane that covers the bones. To do this, slip a dull knife under the membrane, and then with the aid of a paper towel grasp membrane with fingertips, and pull the membrane away from the bones.
- Transfer ribs to a large, shallow baking sheet and rub the reserved spice/sugar mixture on both sides of the ribs with your fingers. Cover with aluminum foil and let sit for about 1 hour at room temperature.
- Meanwhile, prepare the sauce. Heat a medium saucepan over medium heat, add the oil and then cook the diced onion and minced garlic for about 4-5 minutes or until tender, stirring occasionally. Do not let them brown!
