Steps:
- Butter bread on both sides. On a greased griddle, toast bread on 1 side until lightly browned. Turn; spoon about 1/4 cup chili on each slice. Sprinkle with garlic salt. , Top each with 2 tablespoons pizza sauce and about 2 tablespoons cheese. Sprinkle with Italian seasoning. Cook until bottom is golden brown and cheese is melted.

EASY OPEN-FACED PIZZA SANDWICH
Quick and easy recipe. This was a favorite of mine growing up. A true kid pleaser. Not spicy at all, so not for true italian food cravers.

Steps:
- Preheat oven to 350 degrees.
- Brown ground beef in a frying pan, drain grease.
- While beef is browning, slice italian bread into thick slices (about 3/4 inch thick). Each slice will be one sandwich.
- Once beef is browned add 8-10oz can of PLAIN tomato sauce to frying pan. Simmer. Can add salt and pepper to taste.
- While beef and sauce is simmering, toast slices of bread in oven for approx 3-5 minutes.
- Remove toasted bread from oven and spread with 1/4 to 1/2 cup of beef mixture. Top with 1-11/2 slices american cheese.
- Place back in oven for 5-10 minutes or until cheese is melted.
- Remove from oven and enjoy with your favorite salad!

Steps:
- Toast the bread. Trim the crusts. Halve the slices into 1 1/2-by-3-inch pieces.
- For the prosciutto and ricotta: In a small bowl, mix together the ricotta, olive oil, lemon zest and salt. Spread the mixture on 6 pieces of bread. Ribbon a piece of prosciutto on top and garnish with 2 arugula leaves.
- For the avocado: Place 2 slices of avocado on 6 pieces of bread. Sprinkle evenly with the quinoa, sea salt and chile flakes.
- For the smoked salmon: In a small bowl, mix together the creme fraiche and capers. Spread evenly over the remaining 6 pieces of bread. Ribbon a piece of salmon over the top and garnish with 1 or 2 batons of chive.
OPEN-FACED STEAK SANDWICH
Steps:
- Combine the oregano, granulated garlic, kosher salt, parsley, basil, and vegetable oil together in a bowl. Add the rib eye to the marinade and toss to coat. Cover and refrigerate for 12 to 18 hours.
- Remove the rib eye from the marinade and cook in a large skillet, over medium-high heat, to preferred doneness.
- Butter and toast the bread slices and build sandwiches with the meat, red and green bell peppers, mushrooms, onions, and provolone cheese.
EASY PIZZA BURGERS
For a quick lunch or casual supper, these open-faced sandwiches are ready to eat in 20 minutes.

- In 10-inch nonstick skillet, cook ground beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain. Stir in tomato paste, Italian seasoning and mushrooms. Cover and refrigerate; use within 3 days.
- To prepare each sandwich, spread about 1/4 cup beef mixture on English muffin half. Sprinkle 2 tablespoons cheese over top. Place on microwavable napkin or paper towel (to absorb moisture).

- In a large skillet, cook beef and onion over medium heat until the meat is no longer pink, 3-5 minutes, breaking into crumbles. Drain. Stir in the pizza sauce, mushrooms, sugar and oregano; mix well. Spoon onto buns; sprinkle with mozzarella cheese. , Place on ungreased baking sheets. Broil 4 in. from the heat until cheese is melted, 2 minutes. , To freeze for quick lunches later, place the split and toasted buns on a baking sheet. Spoon the meat mixture onto buns; freeze for 1 hour. Transfer to freezer-safe airtight containers., To use frozen burgers: Thaw completely in the refrigerator. Sprinkle with cheese. - Make egg salad: In a medium saucepan, cover eggs with water. Bring to a boil; cook, uncovered, 2 minutes. Cover pan, and remove from heat; let stand 10 minutes. Hold eggs under cold running water to stop the cooking. Peel eggs.
- Slice 2 eggs with a knife or an egg slicer. Set aside eight of the slices for eyes, and place remaining pieces in a bowl. Add unsliced eggs to bowl, and mash with a fork. Add mayonnaise, mustard, salt, and pepper; stir to combine.
- Spread a thin layer of mayonnaise over each slice of bread. Cover bread with egg salad, or layer on sliced ham. Make faces using the egg-yolk slices, egg salad, and the remaining toppings, as desired. Serve immediately.
OPEN FACE MOZZARELLA SANDWICH
This is a good way to use up some leftover Italian bread -- or any bread for that matter. Fresh mozzarella melted over vine ripe tomatoes and basil, then drizzled with extra-virgin olive oil and balsamic vinegar. Yummy! A nice glass of red wine and you're in heaven! Enjoy with a nice salad or a cup of soup; makes a lovely lunch or afternoon snack.

HOT OPEN-FACED SANDWICH
I used to get this all the time at a nearby coffee shop when I was in college, and it's still a favorite lunch. At home, I generally use whole wheat instead of the original white bread, mustard instead of mayonnaise and a slice of processed cheddar cheese instead of American. Tastes great either way. Really be generous with the pepper!
