- In a medium bowl, sift in the flour, salt, and sugar (if using). Make a well in it and crack in two eggs. Add in about 1/4 cup of milk. Whisk the eggs together, slowly incorporating in the flour.
- As the batter starts to thicken, slowly continue to whisk in the rest of the milk. The batter should go from lumpy to smooth. Whisk in the oil. You can also use an electric mixer on low speed to bring everything together.
- Preheat a 10 or 12-inch non-stick skillet or crepe pan on medium-high heat. Make sure the skillet is nice and hot before you start making the pancakes.
- Melt a bit of butter on the pan and swirl it around so it evenly coats the pan. Alternatively, melt the butter in a small bowl and brush it on using a silicone basting brush (see post for why I prefer to use a brush).
- Pour on the pancake batter and quickly swirl the pan around so the pancake batter spreads into a thin layer. I use a crepe spreader to get the perfect round and thin pancake (see post for why this is a handy tool).
- Cook for about 30 - 45 seconds, until the top of the pancake is no longer liquid. Gently shake pan to loosen the pancake. Carefully flip the pancake over and cook for an addition 30 - 45 seconds.
- Slide the pancake onto a plate, and serve warm. Top with a squeeze of lemon and a generous shake of powder sugar.

- Put 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter.
- Set aside for 30 mins to rest if you have time, or start cooking straight away.
- Set a medium frying pan or crêpe pan over a medium heat and carefully wipe it with some oiled kitchen paper.
- When hot, cook your pancakes for 1 min on each side until golden, keeping them warm in a low oven as you go.
- Serve with lemon wedges and caster sugar, or your favourite filling. Once cold, you can layer the pancakes between baking parchment, then wrap in cling film and freeze for up to 2 months.

- Weigh the flour in a large jug or bowl. Crack in the eggs, add half the milk and a pinch of salt. Whisk to a smooth, thick batter. Add the remaining milk and whisk again. Set aside for at least 30 mins.
- Heat a large non-stick crêpe pan or frying pan. Add a drizzle of oil, then wipe out the excess with kitchen paper. When the pan is hot, add enough batter to just cover the surface, swirling it and pouring any excess back into the bowl. The pancake should be as thin as possible. When the edges are peeling away from the sides of the pan, shake it to see if the pancake easily releases and is browning on the underside. If not, cook a little longer. Flip and cook the other side for a minute or two. Serve, or keep warm in a low oven.

- Crack the eggs into a blender, then add the flour, milk and 1 pinch of sea salt, and blitz until smooth.

- Add pancake mix, ½ cup milk, egg, and vanilla extract to a medium-sized bowl.
- Whisk to make a smooth mixture.
- Add the remaining 1 cup milk and butter and whisk to make a smooth lump-free batter.
- Note - To check if the batter is of the right consistency, take a ladle and dip it in the crepe batter. Touch the back of the ladle with your finger. If the mark remains, it means it is of the right consistency and if the gap closes soon, it means that the batter is too runny. If it is too runny, add some more pancake mix to it and whisk well. If it is too thick, then add some milk to it.
- Cover the bowl and let the batter rest for 30 minutes to release the gluten.
- Tip - If the batter still has lumps, then pass it through a fine-mesh strainer.
- Tip - You can also add all the ingredients to a blender or a food processor and blend until smooth.
- Place a 10-inch non-stick skillet or a frying pan on the stovetop.
- Heat the pan over medium-high heat until the pan is HOT.
- Brush the pan with butter and immediately pour ¼ cup of batter into the center of the pan.
- Quickly pick the pan up and tilt and twirl it until the batter covers the bottom of the pan.
- Return the pan to the stovetop and cook until the edges start to peel away from the pan.
- When you notice that the batter is completely set and you can't see liquid anymore on the pan, it is ready to flip. It takes approximately 30-40 seconds for the crepes to cook perfectly.
- Carefully flip the crepes into half using a spatula or your fingers and then again to make a triangle.
- Remove it on the serving plate and serve it with your choice of topping.
- Repeat with the remaining batter.
