CHEWY GINGER DATE GRANOLA BARS
Jump-start homemade granola bars (breakfast cookies anyone?) with oatmeal raisin cookies.

Steps:
- Heat oven to 350°F. Line 9-inch square pan with foil, extending foil 1 inch over 2 opposite sides of pan. Let cookie dough stand at room temperature 10 minutes to soften.
- In large bowl, break up cookie dough. Add almonds, dates and ginger; mix with wooden spoon or knead with hands. Add oats, coconut and chocolate hazelnut spread; mix or knead until well blended. Press in pan.
- Bake 23 to 28 minutes or until edges are golden brown. Cool in pan 20 minutes. Using foil for handles, remove to cooling rack. Cool completely, about 30 minutes.
- Remove foil; cut bars into 4 squares. Cut each square into 3 bars. Store covered.

- Preheat the oven to 350˚F.
- To make the almond flour: Use a high-powered blender to pulse the almonds for roughly 1-2 minutes until fine and powdery. Make sure not to mix too much or the almonds will start to release their oils, resulting in nut butter. Set aside.
- To make the date mix: In the same blender, add the dates with the almond milk and blend for about 3-5 minutes or until you have a paste.
- Add the almond flour and ground ginger to the date mix; blend for 2-3 minutes.
- Pour the mixture into a baking dish and bake in the oven for 20 minutes.
- Let cool and slice into eight equal-sized bars.

- In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
- Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.
- In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
- Bake 25 to 30 minutes or until light brown. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.

GINGERBREAD BARS

- Preheat oven to 350°F/175°C. Line a 9×9-inch pan with parchment paper, leaving enough overhang on the sides for lifting the bars out of the pan after baking.
- In a medium bowl, sift together flour, ginger, cinnamon, nutmeg, baking soda, and salt. Set aside.
- In a mixer bowl fitted with the paddle attachment, beat butter and sugar on medium speed for 3-4 minutes, until fluffy. Add molasses, egg, and vanilla, and beat until combined. Add flour mixture and mix just until combined.
- Spread dough evenly into prepared pan and smooth the top. Bake for 18-22 minutes, until the top is slightly firm to touch, and a toothpick inserted into centre comes out with a few moist crumbs, not clean. Overbaking will make the bars dry. Allow to cool completely in pan.
- To make the glaze: In a small bowl, combine powdered sugar, 1 tablespoon milk, and vanilla extract, and whisk until smooth. Add more milk as necessary until you get a thick yet pourable consistency. Drizzle over the bars using a spoon or a piping bag. Allow glaze to set, 15-30 minutes. For easy cutting, you can place it in the fridge for 2 hours until firm. Lift out of the pan and cut into squares. Serve at room temperature.
- Store bars in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months.
