EASY RICE BAKE CASSEROLE

2 tablespoons butter, plus more for dish
1 small onion, minced
Pinch cayenne pepper
1 package frozen spinach, thawed, drained and chopped
1 cup milk
2 eggs
2 cups shredded sharp Cheddar, plus extra for top
4 cups cooked rice
1 teaspoon freshly chopped parsley leaves
1 teaspoon freshly chopped thyme leaves
1 teaspoon chopped basil leaves
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F. Butter a large casserole dish.
  • In a large pan over medium-high heat, saute onions with 2 tablespoons of butter and cayenne until translucent. Add the spinach and cook for 3 minutes. Set aside.
  • In a large bowl, whisk together milk and eggs.
  • Add the cheese, rice, parsley, thyme, basil and spinach mixture and combine well. Season with salt and pepper.
  • Pour into prepared casserole dish and top with extra shredded cheese. Bake for 30 minutes and serve piping hot.

SIMPLE BAKED RICE



Simple Baked Rice image

Rice infused with garlic and onion baked in chicken stock. A wonderfully simple dish even picky eaters will enjoy. I use homemade stock as it's the most flavorful, but use whatever you have on hand. Another option is adding whatever leftover veggies or meat I have to make a simple casserole without a heavy cream sauce. This recipe uses a rice-to-liquid ratio of 2:1 for long-grain rice.

cooking spray
1 cup long-grain rice
1 tablespoon olive oil
¼ cup diced carrot
¼ cup diced celery
¼ cup diced onion
2 cloves garlic, minced
2 cups chicken stock
1 bay leaf
1 pinch ground black pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 2-quart casserole dish with cooking spray.
  • Spread long-grain rice into prepared casserole dish.
  • Heat olive oil in a saucepan over medium heat. Cook and stir carrot, celery, and onion in hot oil until onion is soft and translucent, about 4 minutes. Stir garlic into mixture; cook and stir 1 minute more. Increase heat to high; add chicken stock and bay leaf to the saucepan and bring to a boil. Pour the mixture over the rice in the casserole dish. Cover the dish tightly with aluminum foil.
  • Bake in preheated oven 20 minutes. Remove aluminum foil and continue baking until the rice is tender and has absorbed most of the liquid, about 20 minutes more. Remove and discard bay leaf; season with black pepper. Fluff with a fork to serve.

Easy Peasy Fried Rice image

This is a quick, easy side dish for any Chinese dish you might be serving. I usually use brown rice (personal preference) but I'm sure it's equally as good with white rice. I'm a big fan of the Onion Mushroom Soup Mix, but it is getting harder to find, so I'm sure you could substitute Beefy Onion, Golden Onion, or Onion instead.

1/4 cup olive oil
4 cups cooked rice
2 garlic cloves, finely chopped
1 (1 ounce) envelope lipton recipe secrets onion and mushroom soup mix
1/2 cup water
1 tablespoon reduced sodium soy sauce
1 cup frozen peas and carrot
2 eggs, slightly beaten

Steps:

  • Heat olive oil in 12-inch skillet or wok over medium-high and stir-fry rice constantly for 2 minutes or until rice is heated through. Stir in garlic.
  • Blend together soup mix, water, and soy sauce. Add to rice and cook 1 minute. Stir in frozen peas and carrots and cook for another 2 minutes or until heated through.
  • Make a well in the center of the rice and quickly stir in eggs until cooked.

2 (15 ounce) cans sweet peas, drained
1 (8 ounce) package shredded Cheddar cheese
1 cup crushed buttery round crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch casserole dish.
  • Bring rice and water to a boil in a pot. Cover, reduce heat to low, and simmer 15 minutes.
  • Stir 1 can chicken broth and the peas into rice. Cover, and continue cooking 5 minutes. Transfer to prepared casserole dish. Pour remaining broth over rice mixture. Sprinkle evenly with cheese and top with crushed crackers.
  • Bake 40 minutes in the preheated oven, until bubbly and golden brown.

This is a layered South of the Border beans and rice dish, very easy to put together we love this at our house! Prep time does not include cooking the rice. Tip: I have layered this casserole with cooked ground beef for a main dish meal.

2 cups grated cheddar cheese (can use more)
2 cups cooked long-grain rice
3 chopped green onions
1/4 cup diced green chilis (I just use a whole small jar, drained for this)
1 (16 ounce) can refried beans
2 cups sour cream (or to taste)
2 -3 cups salsa

Steps:

  • Set oven to 375 degrees.
  • Grease a 2-quart casserole dish.
  • Sprinkle half of the grated cheese on the bottom of the casserole dish.
  • Spoon 1 cup of the cooked rice evenly over the cheese, and sprinkle with half of the green onions.
  • Top the onions with half of the chilies, half of the refried beans and half of the sour cream.
  • Repeat this layer reserving 1/2 of the shredded cheese to sprinkle on top.
  • Bake for 25 to 30 minutes until thoroughly heated through and the cheese is melted on top.
  • Spoon salsa around the edge of the top of the dish, and serve more salsa at the table.
