PERFECT EASY PEEL HARD AND SOFT BOILED EGGS
This method is seriously the best for easy to peel hard boiled and soft boiled eggs. It's super simple and fool proof, too.

- Select a saucepan that's wide enough to fit all your eggs in a single layer. Fill the saucepan with enough water to cover your eggs by about 1 inch. Place saucepan on the stove and add a glug of vinegar and a couple big pinches of salt. Bring water to a boil.
- Working quickly but carefully, very, very gently lower your eggs, 2-3 at a time, into the boiling water. I use a small handheld strainer. Be careful not to crack them. As soon as all eggs are in the boiling water, start your timer. See Note 2 for timing recommendations.
- When time is up, carefully remove the eggs from the boiling water and transfer to an ice water bath using a slotted spoon or small handheld strainer. Alternately, quickly but carefully drain the hot water from the saucepan and fill with enough cold water to just carefully cover the boiled eggs. Add lots of ice, about 2-3 cups.
- Let sit until chilled, about 5 minutes.
- Drain water from the water bath and aggressively shake and jiggle the saucepan or bowl, banging eggs up against one another and the sides of the bowl or pan. Toss the eggs 1/2-1" up in the bowl to liberally crack the shells. They should begin to feel almost like mesh and should not have any large intact pieces.
- Under running water, peel the boiled eggs. The running water is not necessary to make these perfect boiled eggs so easy to peel but is helpful in washing away remaining flecks of shell.

HOW TO BOIL EGGS PERFECTLY (EASY PEEL!)
Steps:
- Place eggs in a single layer at the bottom of a large saucepan or pot. Add enough water to cover the eggs with at least 1 in (2.5 cm) of water over them.
- Add a tablespoon (15 mL) of vinegar and a tablespoon (14 g) of sea salt to the pot. Stir gently.
- Place the pan onto the stove over high heat. Bring the water to a rolling boil.
- Once the water is boiling, set a timer to the following number of minutes based on how you want your eggs.1 minute - Very runny soft boiled eggs2 minutes - Runny soft boiled eggs3 minutes - Very gooey medium boiled eggs4 minutes - Gooey medium boiled eggs5 minutes - Just set medium boiled eggs6 minutes - Medium-hard boiled eggs7 minutes - Very creamy hard boiled eggs8 minutes - Creamy hard boiled eggs9 minutes - Firm hard boiled eggs10 minutes - Very firm hard boiled eggs
- Right before the timer is about to go off, turn on the faucet to the coldest that it goes and let it run until the water is ice cold. Once the timer goes off, drain the hot water and place the pan under the cold running water, letting the ice cold water fill the pan. The water will turn lukewarm from the heat of the eggs and pan. Keep running the water (it will overflow from the pot), until the water in the pan is ice cold. Leave the eggs in the pot for about 10 minutes, until they reach room temperature.
- Once the eggs are at room temperature (but not colder), you can peel them.
- To peel an egg, roll it on the counter with the palm of your hand, pressing gently to make cracks all over the shell. The peel will come right off!

EASY PEEL EGGS (SOFT, MEDIUM, OR HARD)
You don't need an Instant Pot for perfectly cooked eggs (with shells that slip right off!) thanks to this simple technique.

- Place the steamer basket or rack in a lidded saucepan or pot, and fill with as much water as needed to reach the bottom of the steamer basket (about 1 inch or so). Heat the water on high heat until it is rapidly boiling. Remove the pot from the heat and quickly but gently place the eggs in an even layer at the bottom of the steamer basket. Put the pot back on the burner, reducing the heat to medium high. Cover the pot. Set your timer for 6 minutes for soft boiled, 10-12 minutes for not-quite hard boiled with a partially translucent and bright yolk, or 13-15 minutes for fully cooked-through hard boiled. Remove the eggs to a bowl of ice water with a slotted spoon, or run cold water directly into the pan to cover the eggs and quickly cool them. To best preserve freshness, store the eggs, unpeeled, in the refrigerator for up to a week.
EASY-PEEL HARD-"BOILED" EGGS
Hard-boiled is a misnomer, because the perfect hard-boiled egg is not boiled at all but rather steamed! This secret was leaked by a chef, and it is the best way I've found for easy peeling and no green yolks.

Steps:
- Fill a stainless steel steamer pot with about 1 inch water and bring to a boil.
- Add eggs to the steamer tray, carefully lower into the pot, cover, and reduce heat. Cook for 10 minutes for medium yolks or 15 minutes for fully-cooked yolks.
- Remove the steamer tray and rattle eggs around to crack the shells. Transfer eggs to a cold water bath and let sit for 3 to 5 minutes. Remove from water bath.
- Gently crack each egg, roll on a cutting board, then peel the shell off from the fat end towards the point.
