BLUE CHEESE BEEF AND FRIES



Blue Cheese Beef and Fries image

Top oven fries with the works-tender beef, broccoli, brown gravy, and a bit of blue cheese. You can use leftover roast beef, such as part of the extra Tuscan Braised Beef (page 172), or buy the lowest-fat, lowest-sodium cooked beef you can find.

Yield serves 4, 1 1/4 cups per serving

Number Of Ingredients 9

Olive oil spray
4 medium red potatoes (about 1 1/3 pounds), cut into 1/8- to 1/4-inch strips
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/8 teaspoon pepper
2 cups thinly sliced cooked beef from Tuscan Braised Beef or other low-sodium cooked roast beef (about 8 ounces), all visible fat discarded
2 cups frozen broccoli florets, thawed
1 cup bottled fat-free brown gravy
1 1/2 tablespoons crumbled blue cheese

Steps:

  • Preheat the oven to 400°F. Lightly spray a rimmed baking sheet with olive oil spray. Arrange the potatoes in a single layer on the baking sheet.
  • In a cup, stir together the garlic powder, paprika, and pepper. Sprinkle over the potatoes.
  • Bake for 25 minutes, or until the potatoes are tender. Arrange the beef and broccoli on the potatoes. Pour the gravy on top. Bake for 6 to 7 minutes, or until the mixture is warmed through. Sprinkle with the blue cheese.
  • Make fast work of slicing the potatoes for this dish by using the very fine julienne blade of a mandoline or the french-fry blade of a food processor.

Discovered this twist on my favorite fall/winter sandwich and made it at home. Absolutely love it! And much easier than traveling across state to have it on my plate again. :-)

1 1/2 lb shaved roast beef
2 pkg au jus gravy mix
1 can(s) sliced mushroom pieces
1 small onion, julienne sliced
8 slice finlandia swiss lace cheese
1 Tbsp butter/margarine
1 pkg frozen french fries

Steps:

  • 1. Prepare au jus gravy mix according to package directions. Pour finished gravy into slow cooker, add roast beef. Set to low or warm and allow meat to heat through. (I allow at least two hours with crock pot on low)
  • 2. Prepare french fries according to package directions, season to taste.
  • 3. Saute drained mushroom pieces and onion in frying pan, set aside.
  • 4. Layer beef, mushrooms and onion on hoagie bun sliced lengthwise. Top with two slices swiss cheese per sandwich.
  • 5. Ladle au jus gravy into small cups for dipping sandwich and/or fries.
  • 6. Plate sandwich with fries and au jus cup. Can also add a pickle spear (I prefer kosher dill spears).

New Orleans Style Sloppy Roast Beef Poboy (Easy!!) image

If you ever visit New Orleans, at some point in time, you must get a good, sloppy roast beef poboy. The difference between a poboy and a submarine sandwich is the bread. Poboys are made on a very light and crusty french bread. I like my bread heated to where the crust is very crispy, yet the inside is soft. That usually takes about 3-4 minutes in a 350 degree oven. The proper way of eating this is to let the gravy drip onto the fries when you take a bite, then eat the fries and gravy. Mmmmmmm!!! :)

1 lb deli roast beef
1 (18 ounce) jar heinz savory beef gravy
lettuce, finely shredded
1 large tomatoes, sliced
mayonnaise
sliced onion (optional)
sliced dill pickle (optional)
2 loaves crusty French bread

Steps:

  • Have the deli slice the roast beef very thin, but not shaved.
  • Use your favorite beef gravy and heat in medium saucepan. Add roast beef slice by slice into the hot gravy. Remove from heat.
  • Preheat oven to 350 degrees. Heat french bread for 3-4 minutes. Slice in half, lengthwise.
  • Spread mayonnaise on inside of bread. Add lettuce, tomato slices, onions, and pickles.
  • Distribute hot roast beef evenly between both loaves of bread. Cut into 4 sandwiches.
  • Serve with french fries. :).

1 lb ground beef
1 (14 ounce) can whole tomatoes
1 (8 ounce) can tomato sauce
2 teaspoons salt
2 teaspoons sugar
1 lb uncooked elbow macaroni
1 (3 ounce) package cream cheese
1 cup grated cheese

Steps:

  • cook beef until no longer pink. drain off fat; add tomatoes (squishing when you do), tomato sauce, salt, and sugar. simmer for about 10 minuets. Cook noodles according to package and drain. Blend sour cream, cream cheese, into beef mixture. Pour small amount of beef mixture into greased casserole; cover with layer of noodles and the grated cheese. Repeat layers; top with layer of cheese. Bake in 350 degree oven for 35 minuets.

1 large onion, sliced into rings
2 Tbsp worcestershire sauce
4-5 tsp coarsely ground black pepper
4-5 lb rump roast
6 bay leaves

Steps:

  • 1. Place in a greased roasting pan. Rub worcesterdhire sauce and pepper over the roast. Place over the onion; top with bay leaves. Cover and bake at 325 degrees2 1/4 hours or until meat reaches desired doneness. Discard bay leaves. Let stand for 10-15 minutes before carving. Thicken pan juices if desired. Makes 8 servings.

1 (10 3/4 ounce) can tomato soup
1 (8 ounce) can stewed tomatoes

5 ounces mafalda noodles, cooked according to pkg. directions. (thick lasagna noodles)
salt, to taste
pepper, to taste
garlic powder

Steps:

  • Brown beef and onion in large skillet. If necessary, drain when browned.
  • Stir in stewed tomatoes, soup, and seasonings. Simmer 5-10 minutes.
  • Stir in sour cream and cream cheese. Add cooked mafalda noodles.
  • Turn into 2-quart casserole and bake at 350 degrees for 30-35 minutes.
