- In a large skillet, crumble sausage. Cook until no longer pink; drain. Add the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until rice is tender.

- In a large skillet, saute sausage in butter for 3-4 minutes or until lightly browned. Add the potatoes, onion and apple; saute 4-5 minutes longer or until apple is tender and potatoes are golden brown. Stir in the vinegar, sugar and caraway seeds., Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Sprinkle with parsley.

HAWAIIAN SAUSAGE SKILLET
I made this up one day when I couldn't find a recipe anywhere with these ingredients. So I kind of threw it together on a whim. Sugar can be adjusted for sweetness, and if the sauce gets a bit thicker than desired I suggest adding a little chicken broth as it's thickening. Serve immediately over rice.

- Heat oil in a large skillet over medium heat. Cook and stir sausage, onion, and green bell pepper until vegetables start to become tender, about 8 minutes; add pineapple and cook, stirring occasionally, until the pineapple is hot, about 5 minutes more.

This is a great weeknight dish. Only one skillet to clean afterwards! I adapted this from a recipe that I found in Southern Living years ago. Of course you can use turkey or chicken sausage and it doesn't change the flavor. If I don't have any left-over chicken then I buy a roasted one from the store.

- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion and celery; cook until vegetables have softened, about 5 minutes. Remove from the pan; set aside and keep warm.
- Brown rice and vermicelli mix in the sausage drippings, adding butter if needed. Slowly add water and seasoning package; bring to a boil. Cover and reduce heat to low. Simmer until rice is tender, 15 to 20 minutes. Just before rice is finished, add sausage-vegetable mixture. Stir well and let sit for 5 minutes before serving.

- Heat olive oil in a 12-inch nonstick skillet over medium heat until shimmering. (Be sure to use at least a 12-inch size skillet to hold all ingredients.) Add the onion and 1/2 teaspoon salt and cook until softened, about 5 minutes.
- Stir in the sausage and cook, breaking it up with a wooden spoon, until no longer pink, about 4 minutes.
- Stir in the garlic and cook until fragrant, about 15 seconds. Sprinkle the sun-dried tomatoes and penne evenly over the sausage. Pour the broth and milk over the pasta. Cover and bring to a simmer. Reduce heat to medium-low and continue to simmer, stirring occasionally, until the pasta is tender, about 10 minutes.
- Stir in the spinach a handful at a time and cook until wilted, about 2 minutes. (It may seem like a lot of spinach, but it will wilt considerably.) Stir in the Parmesan and season with salt and pepper to taste.
- Note: You can use Italian pork sausage, but you may have to spoon some of the fat off before adding the pasta.
