EASY SCD PASTA BAKE

Steps:
- Preheat oven to 400 degrees
- Bring a large pot of water to boil
- While you're waiting, go ahead and sauté the diced red onion in 2 tablespoons of olive oil for two minutes on medium heat in a large pan. Add in your sliced mushrooms and remaining tablespoon of olive oil. Continue to sauté for another 2 minutes, making sure to stir the onions and mushrooms. Remove from heat.
- Add your rotini to the boiling water and cook for 7-8 minutes. It will still be a bit firm but will soften just the right amount while baking in the oven. Drain pasta into strainer, shake to remove excess water.
- Place your pasta back into the large pot and toss with the sautéd onion, mushroom and chicken. Stir in your marinara and 1/2 cup of the shredded parmesan.
- Pour into 8×8 square baking dish or casserole dish.
- Sprinkle remaining 1/2 cup of shredded parmesan over top and tear provolone into pieces, and place evenly on top.
- Bake covered with foil for 15 minutes, then uncovered for another 15-20 minutes.
- Serve with fresh parsley, enjoy!! Cover leftovers and refrigerate.

- Assemble the sauce. Preheat the oven to 180C/gas 4/fan160C. Tip the pasta sauce into a large bowl and thin it down with 100ml/31⁄2fl oz water. Scatter in the basil leaves and tortellini, season with salt and freshly ground pepper, and give it all a really good stir.
- Layer it all up. Tip half the pasta mixture into two individual gratin dishes (or one bigger one), tear half of the mozzarella and scatter over each dish. Spoon the rest of the pasta and sauce on top and press the pasta down a little so it doesn't stick above the sauce too much. Tear the remaining mozzarella and scatter on top with the parmesan and the pine nuts.
- Bake and serve. Put the dishes on a baking sheet to catch any spills, and bake for 25-30 minutes until golden and bubbling. Serve with a leafy salad.

- Bring a large pot of lightly salted boil water to a boil. Cook mostaccioli pasta in boiling water for 8 to 10 minutes, or until al dente. Drain well.
- Meanwhile, cook ground beef and chopped onions in a skillet over medium heat until browned.
- In a large bowl, mix together the mushrooms, spaghetti sauce, shredded mozzarella cheese, pasta, and browned ground beef and onion mixture. Transfer to a greased, 9x13 inch casserole dish.
- Bake at 325 degrees F (165 degrees C) for 20 minutes, or until very hot.
