This banana dump cake is easy to throw together and great if you love banana bread as much as we do. Drizzled with caramel sauce it's a great dessert.

1 box banana bread mix (quick bread mix)
4 large bananas (3 yellow, 1 can be browned - added into the mix)
1 c milk (2% or whole is best)
1/2 c walnuts (crushed, optional)
1/2 c oil
2 eggs

Steps:

  • Spray 13x9 pan with non stick spray. Slice your 3 yellow bananas and layer on the bottom of the pan, there will be about 2 layers all the way across evenly across the pan.
  • Sprinkle nuts in between the 2 banana layers or on top of the final layer if you would like to add those.
  • In a bowl mix together your 1 mashed banana, quick banana bread mix, milk, oil, and water.
  • Dump your batter on top of your layers of banana and spread across pan so batter is evenly distributed and the same thickness so it bakes evenly.
  • Bake at 350 degrees for 35 minutes or until top is golden brown, you don't want to over bake it.
  • Take out and put on a cooling rack.
  • Slice serving out and flip upside down so bananas are now facing the top of your dump cake piece.
  • Drizzle caramel sauce on top or add a scoop of vanilla ice cream and then drizzle caramel on top!!

1 box fudge or devil food chocolate cake mix
1 c brown sugar
1 stick soft butter
3/4 c peanut butter
1/2 c semi-sweet chocolate morsels
3/4 c jelly or preserves (I used orange marmalade)
3 small bananas

Steps:

  • 1. Preheat the oven to 350 degrees.
  • 2. Mix cake as directed on the box. Set aside.
  • 3. Spray a 9x13 pan with butter cooking spray.
  • 4. In a small bowl cream the butter and brown sugar. Spread the mixture on the bottom of the baking dish.
  • 5. Slice the bananas long way and cut in half and arrange in bottom of pan. Put peanut butter by the teaspoons on the bottom of the pan. Arrange the jelly in open areas. Toss in chocolate morsels. Pour cake batter over the ingredients.
  • 6. Bake for 45 mins or until knife inserted comes out clean.
  • 7. Let the cake cool about 10 minutes and loosen the sides and invert onto a platter.
  • 8. If you want a more moist and gooey Dump Cake mix 6 tbsp butter, 1/2 c brown sugar and 1/4 tsp vanilla extract and heat in microwave for 45 seconds and pour over cake.
  • 9. Cut into squares and serve.

3 cups Flour
1 1/2 tsp Baking Soda
1/2 tsp Ground Cinnamon
1/2 tsp Salt
3/4 cup Butter (softened at room temperature)
1 cup Granulated Sugar
1/2 cup Brown Sugar
3 large Eggs
1 tsp Vanilla Extract
1 1/2 cups Milk
1 1/2 Tbsp Lemon Juice
Ingredients for Cream Cheese Icing:
1 8 oz Package of Cream Cheese, softened at room temperature
1/4 cup Butter (softened at room temperature)
3-4 cups Powdered Sugar (shifted)
1 tsp Vanilla Extract

Steps:

  • Preheat the oven to 350 degrees F and spray a 9X13 baking pan with non stick cooking spray or grease and flour the pan.
  • Mix the milik and lemon juice together and set aside.
  • With a hand held mixer or stand up mixer combine the butter and both of the sugars until well combined. Add in the eggs one at a time. Then add in the vanilla extract. Mix on high spreed until the mixture is light and fluffy.
  • Then mix in the flour, baking soda and salt in a medium size bowl. Gradually add the flour mixture and milk mixture to the butter mix. Alternate adding each one in until both are fully added.
  • Gently stir in the mashed bananas.
  • Pour the mixture into the 9X13 pan.
  • Baked for 40-45 minutes until a toothpick inserted into the center comes out clean. Watch closely as baking times vary.
  • Remove the oven and place the cake on a wire rack to cool completely.
  • While the cake is cooling, create the frosting. Beat together the cream cheese and butter until smooth. Gradually add in the powdered sugar 1 cup at a time and mix in between each cup until the frosting is the thickness that you desire. Stir in the vanilla extract.
  • Spread the cream cheese frosting over the cake, refrigerate for at least 30 minutes and then slice, serve and enjoy!

1/2 cup good quality milk chocolate chips
1 3/4 cup skim milk
1 cup fresh strawberries, chopped
2 bananas, sliced
1 cup pineapple, chopped
1/4 cup sugar
whipped cream for serving (optional)

Steps:

  • Preheat oven to 350°F
  • Spray a 9/13 inch baking dish with nonstick spray.
  • In a large bowl, mix the pudding mix with milk. Whisk until fully combined. Use a large spoon or whisk to add in the cake mix until fully incorporated and smooth. The mixture will be quite thick, which is fine. Stir in the chocolate chips. Set aside.

4 tablespoons butter, melted
1 package yellow cake mix
1 cup milk

1/4 cup light brown sugar, packed

1 cup powdered sugar

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Grease a 9x13-inch or disposable foil pan with oil or butter.
  • In a large bowl, beat together bananas and eggs with an electric mixer at medium speed until the bananas are mashed, about 1 minute.
  • Reduce the mixer speed to low and pour the melted butter. Increase speed to medium and beat in the cake mix and milk until combined, about 2 minutes.

3 large ripe bananas (about 1 and 1/2 cups mashed)
3 cups (375g) all-purpose flour (spoon & leveled)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup (170g) unsalted butter, softened to room temperature
1 cup (200g) granulated sugar
1/2 cup (100g) packed light or dark brown sugar
3 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 and 1/2 cups (360ml) buttermilk, at room temperature*
8 ounces (224g) full-fat block cream cheese, softened to room temperature
1/2 cup (115g) unsalted butter, softened to room temperature
3 cups (360g) confectioners' sugar, plus an extra 1/4 cup if needed
1 teaspoon pure vanilla extract
1/8 teaspoon salt

Steps:

  • Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan.
  • Mash the bananas. I usually just use my mixer for this! Set mashed bananas aside.
  • Whisk the flour, baking powder, baking soda, cinnamon, and salt together. Set aside.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy - about 1 minute. Add both sugars and beat on high speed for 2 minutes until creamed together. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the eggs and the vanilla. Beat on medium-high speed until combined, then beat in the mashed bananas. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients in three additions alternating with the buttermilk and mixing each addition just until incorporated. Do not overmix. The batter will be slightly thick and a few lumps is OK.
  • Spread batter into the prepared pan. Bake for 45-50 minutes. Baking times vary, so keep an eye on yours. The cake is done when a toothpick inserted in the center comes out clean. If you find the top of the cake is browning too quickly in the oven, loosely cover it with aluminum foil.
  • Remove the cake from the oven and set on a wire rack. Allow to cool completely. After about 45 minutes, I usually place it in the refrigerator to speed things up.
  • In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter together on high speed until smooth and creamy. Add 3 cups confectioners' sugar, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes. If you want the frosting a little thicker, add the extra 1/4 cup of confectioners sugar (I add it). Spread the frosting on the cooled cake. Refrigerate for 30 minutes before serving. This helps sets the frosting and makes cutting easier.
  • Cover leftover cake tightly and store in the refrigerator for 5 days.
