Got a sweet tooth but not much cash? This recipe is so easy and yummy, and you can use almost any kind of canned fruit to make it. You can't mess this one up; it's great for the beginner!

1 (29 ounce) can sliced peaches
2 teaspoons ground cinnamon
¼ cup white sugar
1 (9 ounce) package yellow cake mix
4 teaspoons margarine

Steps:

  • Discard 1/2 of the juice from the peaches and pour the rest into a saucepan. Sprinkle the top with cinnamon and sugar. Empty the cake mix on top of the peaches in an even layer. Place the margarine on top of the cake mix in the center.
  • Cover sauce pan with a lid and bring to a simmer over medium-high heat. Once you see steam escaping the saucepan, reduce heat to medium-low, and continue cooking for 10 minutes. Do not lift the lid during this time! Remove from heat and allow to stand with the lid on for 15 minutes before serving. The cake mix should look like dumplings.

1 package yellow cake mix
½ cup brown sugar
½ cup butter, cut in small pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line the inside of a Dutch oven with aluminum foil.
  • Spread cherry pie filling in an even layer into the bottom of the Dutch oven. Sprinkle cake mix over the pie filling; top with a layer of brown sugar. Dot the top with butter pieces. Put lid on the Dutch oven.
  • Bake in preheated oven until the top is golden brown, 45 to 90 minutes.

1/2 cup butter or margarine

1 cup frozen dark sweet cherries, thawed
Whipped cream or vanilla ice cream, if desired

Steps:

  • Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish or shallow 2-quart casserole with cooking spray. In large bowl, stir topping ingredients until smooth; set aside.
  • In 2-quart saucepan, melt butter over medium heat. Stir in remaining fruit mixture ingredients. Cook about 2 minutes, stirring frequently, until mixture is hot. Spoon fruit mixture into dish. Pour topping evenly over fruit.
  • Bake 45 to 50 minutes or until golden brown and toothpick inserted in center comes out clean. Cool about 20 minutes before serving. Serve warm with whipped topping or ice cream.

2 pounds cherries, stemmed and pitted
½ cup plus 2 tablespoons sugar
1 tablespoon lemon juice
½ cup flour
¼ cup cornmeal
½ teaspoon baking powder
salt
8 tablespoons (1 stick) cold unsalted butter, cut into bits
1 egg
½ teaspoon vanilla extract
Ice cream, whipped cream or Greek yogurt for serving.

Steps:

  • Put the cherries, 1/3 cup sugar, lemon juice and 2 tablespoons water in a large skillet over medium heat; you can also put the skillet on the grill or over a campfire. Cook, stirring occasionally, until the juices have released, about 10 minutes.
  • Meanwhile, combine the flour, cornmeal, baking powder, a pinch salt and remaining sugar in a bowl, or pulse once or twice in a food processor. Add the butter, and process for 10 seconds or until mixture is well blended. Add the egg and vanilla; mix until combined.
  • When the cherry mixture is thickened slightly, dollop the batter over the top, and cover the skillet tightly with a lid or aluminum foil. Cook, undisturbed, until the dumplings are cooked through, and their tops are dry (not sticky), 20 to 25 minutes. Serve with ice cream, whipped cream or yogurt.

I found this recipe in the Betty Crocker "Good and Easy" cookbook and it's become a family favorite. The almond and cherry combination is wonderful. It's such a fast recipe, using ingredients that are easily kept on hand. UPDATE 2/16/09: Thanks to several reviews pointing out that the recipe needs to be served a la mode, I am modifying the original recipe to the way I've been making it myself for years now. I've always had ice cream in step 8 as a serving option (have now added it to the ingredient list) & I've always used a full teaspoon of almond extract in the mix because we prefer the stronger flavor. • 6 cups (about 32 ounces) frozen sour cherries

Steps:

  • 1 For the Dumplings:Combine the flour, sugar, baking powder, and salt in a bowl. Rub the butter cubes into the flour mixture with fingertips until no visible pieces of butter remain but flour mixture is still fluffy and dry. Stir in milk and vanilla until mixture is just moistened. Do not overmix. Set aside. 2 For the Cherries: Combine sugar, cornstarch, cinnamon, and salt in bowl. Place cherries and sugar mixture in 10-inch saucepan and heat over medium heat, stirring occasionally, until sugar is dissolved. Increase heat to medium high and heat until cherries have just come to a boil.
