Easy Homemade Strawberry Bread image

Strawberry Bread is an easy to make homemade quick sweet bread recipe perfect for breakfast, snacking, or even dessert!

2 eggs
2/3 cup sugar plus 1 tablespoon for dusting
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup milk
1/2 pint fresh strawberries, hulled and diced

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Spray a loaf pan with nonstick spray.
  • In a large bowl or stand mixer (affiliate link), combine eggs, 2/3 cup sugar, vegetable oil, and vanilla and beat on medium speed until fully blended.
  • Add flour and baking powder, then milk and continue to mix until uniform.
  • Gently fold in diced strawberries and pour into prepared pan. *See note below*
  • Sprinkle with 1 tablespoon of sugar over the top of the batter.
  • Bake for 45 minutes or until toothpick inserted into the center comes out clean.
  • Cool in pan 10 minutes before transferring to a cooling rack.

My husband and I are strawberry lovers, so each spring we pick about 30 quarts. This recipe makes two delicious loaves. One we eat right away; the other we freeze and pull out when family comes to visit.

3 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
1 egg plus 3 egg whites, lightly beaten
1-1/4 cups vegetable oil
2 cups chopped fresh or frozen strawberries
1-1/2 cups chopped walnuts

Steps:

  • In a large bowl, combine flour, baking soda, sugar, cinnamon and salt. Add egg, egg whites and oil; stir just until moistened. Fold in strawberries and nuts. Spoon into two greased 8x4-in. loaf pans. , Bake at 350° for 70 minutes or until bread tests done. Cool in pans 10 minutes before removing to a wire rack.

  • Mix dry ingredients in large bowl.
  • Form hole in middle. Mix eggs and oil and pour in hole.
  • Add berries and mix by hand. Pour into 2 greased and floured loaf tins and bake at 325 degrees for 1 1/4 hours, or until done.
  • Cool before cutting. Great with cream cheese. Bread may be frozen.

1/2 cup vegetable oil, plus more for greasing the pan
1/2 cup plus 2 tablespoons walnuts
1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon fine salt
2 large eggs
1 teaspoon pure vanilla extract
1/2 teaspoon lemon zest
2 very ripe bananas, mashed
8 ounces strawberries, hulled and cut into 1/4- to 1/2-inch pieces

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- by 5-inch loaf pan.
  • Roughly chop 1/2 cup of the walnuts, and finely chop the remaining 2 tablespoons, keeping them separate.
  • Whisk together the flour, sugar, roughly chopped walnuts, baking powder, cinnamon, nutmeg and salt in a medium bowl.
  • Whisk together the oil, eggs, vanilla and zest. Fold in the bananas and strawberries. Fold the oil mixture into the flour mixture until just combined (it's OK if there are some lumps). Transfer the batter to the prepared pan, and sprinkle the top with the finely chopped walnuts.
  • Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Run a knife around the edges, and let cool completely in the pan on a rack. The bread can be stored at room temperature in an airtight container for up to 3 days.

2 cups white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter and flour two 9 x 5-inch loaf pans.
