This simple Thermomix Chocolate Cake can be ready to enjoy in just 40 minutes and is made with pantry staples.

90 grams butter
2 tablespoons cocoa
2 eggs
1/2 teaspoon vanilla extract
175 grams caster sugar
175 grams self raising flour
130 grams milk

Steps:

  • Preheat your oven to 170 degrees celsius (fan forced) and line the base of a 28 x 18cm slice tin with baking paper.
  • Place the butter (which has been cubed) into your Thermomix bowl and melt for 2 minutes at 65 degrees on speed 2.
  • Add the self raising flour, cocoa, caster sugar, eggs, milk and vanilla essence to your thermomix bowl and mix for 5 seconds on speed 4 before scraping down the sides and mixing for a further 7 seconds on speed 4 or until combined.
  • Pour the mixture into the prepared cake tin and bake for 35 minutes or until a skewer inserted in the middle comes out clean.
  • Allow cake to cool in the tin for five minutes before transferring to a wire rack to cool completely.
  • Ice cake with a plain chocolate icing

A simple recipe for Thermomix Chocolate Cake which is quick to make and tastes delicious!

75g unsalted butter, chilled and roughly cubed
25g cocoa powder
125g icing sugar
20g milk
125g unsalted butter, chilled and roughly cubed
125g caster sugar
125g self raising flour
2 tablespoons cocoa powder
2 eggs
1 tablespoon golden syrup

Steps:

  • Preheat the oven to 190°C / 170°C fan-forced and grease and line a round cake tin with baking/greaseproof paper. Mine measured 20cm.
  • Soften the butter in the Thermomix bowl for 30 sec/speed 5 until creamy.
  • Add the remaining ingredients to the Thermomix bowl and mix for 10 sec/speed 5. Scrape down the bowl and along the bottom of the mixing bowl with a spatula then mix for another 5-10 sec/speed 5 until smooth.
  • Spoon the batter into the cake tin and bake for 35-40 minutes until firm to touch and a toothpick inserted into the middle comes out clean.
  • Cool for 10 minutes in the tin then turn out onto a wire rack to cool completely before icing.
  • Add the butter to the Thermomix bowl and mix for 20 sec/speed 5 until creamy.
  • Insert the butterfly whisk, add the icing sugar and cocoa powder and beat for 20 sec/speed 3. Scrape down bowl.
  • Add the 20g milk and beat again for 20 sec/speed 2.5. Scrape down the sides and bottom of the bowl with the spatular and repeat for 10 sec/speed 2.5 until creamy.

This Thermomix Chocolate Cake is rich and fudgy with a to-die-for chocolate buttercream. It is the perfect cake for birthday cakes.

500g water
1 shot espresso* (see notes)
250g butter
70g cocoa powder
4 eggs
1 tsp vanilla extract
200g brown sugar
200g caster sugar
350g plain flour
2 tsp baking powder
1 tsp bicarbonate of soda
500g icing sugar
300g butter (cold from fridge)
80g cocoa powder
90g milk
1 tsp vanilla extract

Steps:

  • Pre-heat the oven to 150 C / 300 F.
  • Add the water, coffee (if using), butter and cocoa to the bowl and heat/melt for 3 minutes / 80 degrees / speed 2. Remove lid and allow to cool. (This will take around 10 minutes, ideally you want the temperature to drop to 50 degrees or below)
  • Meanwhile, grease and line two or three cake tins (see notes) (see here for method).
  • Once the mixture is cool, add the eggs and vanilla extract. Mix for 5 seconds / speed 4.
  • Add the sugars, flour, baking powder and bicarb soda. Mix for 30 seconds / speed 4.
  • Pour into cake tins (the batter is quite runny so you can pour directly from the TM bowl).
  • Bake in the oven for 30 minutes, or until a skewer inserted into the middle of the cake comes away clean.
  • Allow to cool for a couple of minutes in the tin before carefully turning out onto a wire rack to cool completely.
  • Add the icing sugar to a clean dry Thermomix bowl. Blitz for 10 seconds / speed 9. Set aside.
  • Chop butter into pieces and add to the bowl. Cream for 30 seconds / speed 5.
  • Add the icing sugar, cocoa powder, milk and vanilla extract. Mix for 30 seconds / speed 5.
