EASY PANTRY RECIPE: RACH'S EVERYTHING CHILI WITH TORTILLA TOPS
Rach's recipe for her tortilla-topped chili relies on pantry staples, making it ideal for days where a quick stop at the store just isn't in the cards.

Steps:
- For the Spice Blend, combine ingredients in a small bowl
- For the Chili and Tortillas, heat a Dutch oven or chili pot over medium-high heat, add oil and brown meat or plant-based meat, and season with salt and pepper
- Add onions, garlic and spice blend, stir a few minutes to soften, add chilies, chipotle paste, Worcestershire, soy sauce, fire-roasted tomatoes, tomato or taco sauce, and beans, then add stock and thicken a bit
- If using tortillas, preheat oven to 350°F
- Scatter wedges on a large baking sheet
- Spray with cooking spray and bake until golden and crisp, about 4 to 5 minutes
- Remove from the oven and reserve
- Serve chili in bowls, then arrange bowls on baking sheet and top with tortillas or broken taco shells and cheese and broil briefly to melt
- Top with garnishes of choice

- In a large skillet, cook beef over medium heat until no longer pink. Stir in the tomato sauce, beans, corn, green chilies, onion, chili powder, cumin, garlic powder and oregano; heat through., In an 11x7-in. baking dish coated with cooking spray, layer half of the tortillas, beef mixture and cheese. Repeat layers. Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

TORTILLA CHIP CHILAQUILES

- Heat the chile pepper and garlic in a dry 10-inch cast-iron skillet over medium-high heat, turning occasionally, until the chile is pliable and the garlic is browned in spots, about 5 minutes. Remove from the heat and let cool slightly; remove the stem from the chile and peel the garlic. Transfer the chile and garlic to a blender (reserve the skillet). Add the tomato sauce, chicken broth and cumin; puree until almost smooth.
- Heat 1 tablespoon vegetable oil in the reserved skillet over medium heat. Slowly add the tomato mixture (it will splatter) and cook, stirring occasionally, until slightly thickened and darkened, 8 to 10 minutes. Season with salt and black pepper.
- Meanwhile, heat the remaining 2 teaspoons vegetable oil in a medium nonstick skillet over medium heat. Crack the eggs into the skillet and season with salt and black pepper. Cook, without flipping, until the whites are set but the yolks are still runny, 3 to 4 minutes.
- Gently stir the tortilla chips into the tomato sauce in two batches until coated. Remove from the heat and top with the eggs, radishes, red onion, cilantro and/or Cotija cheese.
TORTILLA CHICKEN CHILI
The addition of tortilla chips gives this chicken chili a traditional cornmeal flavor that is almost like eating a chicken enchilada. It's not only easy to make but it's ready in less than 30 minutes!

- Preheat the oven to 375 degrees F.
- Add the vegetable oil, lime juice, chili powder, smoked paprika and cayenne pepper to a small bowl and whisk to combine.
- Arrange the tortillas on a clean work surface. Using a pastry brush or a silicone brush, lightly brush the tortillas with the lime spice mixture. Be sure to just lightly coat the tortillas in the mixture; do not oversaturate them. Flip over the tortillas and lightly coat the other side as well.
- Stack the tortillas and cut them in half, then cut each half into 3 chip-size wedges (6 wedges per tortilla). Transfer the wedges to 2 rimmed baking sheets and arrange them in an even layer, making sure not to overlap any. Sprinkle the salt evenly over the wedges on both baking sheets.
- Bake until the chips are golden and crispy, about 15 minutes. Transfer the chips to a wire rack to cool slightly before serving.

- Heat the olive oil in a large, heavy skillet over medium-high heat. Add the onion, garlic, salt, chili powder, and oregano and cook, stirring, until fragrant, about 3 minutes. - Heat oil over medium-high in a heavy pot.
- Add onions, garlic, and jalapeño until soft, approximately 4 minutes.
- Toss in chili powder and cumin, and cook for another minute.
- Stir in the tomatillo salsa, beer and stock.
- Bring to a boil(bubbling) then add the chicken or turkey.
- Simmer for 10-15 minutes.
- While that cooks, grind up 2 handfuls of the chips and the cilantro leaves in your food processor, or chop leaves and crush chips with flat of knife if not available.
- Stir into the chili and continue to cook until it thickens, about 8-10 minutes.
- Remove from heat, add lime juice and spoon into bowls, serve with a side of chips or fresh tortillas.
- Garnish with sour cream and shredded cheese, if desired.
