EASY TRADER JOE'S MEAL: CUBAN BLACK BEAN BURGERS

- Blend together 1 cup black beans and the egg in a food processor or blender. Set aside.
- In a large bowl, add the rest of the black beans and mash together using a fork or a potato masher. Leave the mixture chunky, with some whole black beans intact.
- Add the black bean/egg mixture, bell pepper, onion, lime juice, multigrain hot cereal, cheese, cilantro, cumin, oregano, garlic, salt, and pepper to the bowl. Mix until well combined.
- Shape the black bean mixture into patties using your hands. Be sure to press the burgers together firmly so they remain intact throughout cooking.
- Dredge each burger patty in the cornmeal or panko breadcrumbs. Shake off any excess.
- Heat the coconut oil in a skillet over medium heat. Cook the burgers in batches for 4 minutes on each side (8 minutes total).

- Put the wholemeal bread and walnuts in a food processor and pulse to make fine crumbs.
- Prick the sweet potatoes with a fork and microwave for 5-10 mins until soft. Cut in half and scrape the cooked centres into the food processor with the bread and walnut crumbs. Make sure the beans are drained thoroughly then add them to the processor with the paprika, cumin, onion granules, and tomato puree. Season generously and pulse until the mixture is mostly smooth and holding together. Divide the mix into 4 patties and chill for 20 mins to firm up.
- Meanwhile make the side salad by mixing the cucumber, carrot, coriander, lime juice and rapeseed oil together. Season and put to one side.
- Heat the oil in a large non-stick frying pan over a medium heat. Add the patties and fry for 4-5 mins on each side until golden and hot through. Place a small handful of rocket into each burger bun. Top with the tomato slices, burgers, and then avocado. Add a dollop of coconut yogurt or burger sauce of your choice. Serve with the carrot and cucumber salad alongside.

- Using fork, mash beans in medium bowl. Mix in onion, breadcrumbs, 2 tablespoons salsa, cumin and hot pepper sauce. Season with salt and pepper. Using moistened hands, shape bean mixture into two 3- to 4-inch-diameter patties.
- Prepare barbecue (medium-high heat) or preheat broiler. Brush barbecue rack with oil. Grill burgers until heated through, about 3 minutes per side. Grill cut sides of buns until lightly toasted, about 1 minute. Transfer burgers to bottom halves of buns. Spoon 1/4 cup salsa over each. Cover with tops of buns.
