Easy Watermelon Salad (with feta) image

Watermelon Salad is the perfect salad for potlucks or a backyard BBQ! Crisp, refreshing, and full of summer flavors!

2 avocados (ripe, optional)
½ lime
6 cups watermelon (diced)
2 tablespoons olive oil
1 teaspoon cider vinegar
¼ cup fresh mint (chopped)
salt & pepper (to taste )
½ cup feta cheese (crumbled)

Steps:

  • Dice avocados if using and place in a large bowl. Squeeze lime juice over avocado and stir.
  • Add watermelon, olive oil, cider vinegar, mint, salt & pepper to taste. Toss to combine.
  • Top with feta cheese and serve.

Discard the mint; add the zest and juice of 1 lemon and a pinch of salt. Toss with 2 cups blueberries and 3 cups cubed watermelon. Let stand 15 minutes. Top with chopped mint.

1/2 cup diced red onion
1/2 cup diced English (seedless) cucumber
3 tablespoons thinly sliced fresh basil leaves
1/3 cup crumbled feta cheese

Steps:

  • In large serving bowl, mix lime zest, lime juice and salt with whisk until well blended. Add remaining ingredients except feta cheese. Gently toss to coat. Refrigerate about 30 minutes or until chilled.
  • Gently stir in feta cheese just before serving.
