BAKED TUNA MEATBALLS

Baked Tuna Meatballs image

Baked tuna meatballs are a healthy, seafood spin on meatballs! They're paleo, low-carb and keto-friendly as well. Watch the video above to see how I make them!

Provided by Lisa Bryan

Categories     Appetizer     Main Course

Time 40m

Number Of Ingredients 12

1 tablespoon olive oil
1/2 medium onion (finely diced)
2 cups baby spinach (chopped)
2 cloves garlic (minced)
3 5-ounce cans tuna (or one pound cooked tuna)
1/4 cup almond flour
2 beaten eggs
1 tablespoon mayonnaise
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
2 tablespoon chopped fresh dill (chopped)
salt and pepper (to taste)

Steps:

  • Heat the oil in a pan on medium heat. Add the diced onion and minced garlic and saute for a minute. Then add the chopped baby spinach and saute for another 1-2 minutes or until the spinach is wilted.
  • Transfer the onion spinach mixture to a bowl and let it cool. You can place the bowl in the fridge to speed this up.
  • Preheat your oven to 400 degrees fahrenheit.
  • Drain the cans of tuna and add the tuna to a mixing bowl along with the cooled vegetables, almond flour, eggs, mayonnaise, lemon juice, parsley, dill, salt and pepper.
  • Use your hands to dig in and mix everything together, breaking up any large chunks of tuna. The finer the mixture, the easier it will stick together.
  • Use a medium cookie scoop to scoop out evenly sized amounts of mixture. Use your fingers to mold this into a ball, then place it on a parchment lined baking tray.
  • Bake the tuna meatballs for 20-25 minutes, or until lightly golden.

Categories     Keto Dinner

Number Of Ingredients 7

1 1/2 c Mozzarella Cheese
2 tsp cream cheese
3/4 c almond flour
1 egg
2.6 oz tuna
2 tbsp cream cheese
2 tbsp green onion (chopped)

Steps:

  • Melt mozzarella & cream cheese in the microwave. I do about 45 seconds, remove from microwave and stir and pop back in for another 45 seconds.
  • Add in almond flour and egg until combined.
  • Place dough on parchment paper. Top with the second piece of parchment paper and roll out until it's about 1/4" thick.
  • Use a round cookie or biscuit cutter. I used a 3" for this recipe for a smaller tuna ball. You can use a larger one if you prefer.
  • In a medium size bowl mix together tuna, cream cheese, and chopped green onions.
  • Grab a piece of the fat head dough that's been cut out into a circle. Using a teaspoon, put filling onto the dough. Pinch the ends of the dough together and pinch together to ensure the filling isn't going to come out. Roll in the palm of your hand until the dough looks smooth.
  • Place seam side down on the baking sheet and repeat the process until the filling is gone. You will need to reroll the extra fat head dough a second time.
  • Bake in the oven at 350° for 20 minutes and golden brown.
  • Serve with a side of tartar sauce!
