This recipe is a family favorite that I created - and named! - myself. The spinach packs it with a real "Popeye punch", and the other vegetables combined with the ground beef make it a hearty meal.

Yield 4-6 servings.

Number Of Ingredients 9

1 pound ground beef
1/2 pound fresh mushrooms, sliced
1/2 pound fresh spinach, torn
6 green onions, sliced
1/4 cup chopped celery
1/4 cup chopped sweet red pepper
1 teaspoon garlic salt
1/2 teaspoon pepper
6 large eggs, lightly beaten

Steps:

  • In a large skillet, cook beef and mushrooms over medium heat until meat is no longer pink; drain. Add the spinach, onions, celery, red pepper, garlic salt and pepper. Cook and stir for 1 minute. Add eggs; cook and stir just until the eggs are set. Serve immediately.

SPINACH CHEESE BALLS (USING CANNED SPINACH)



Spinach Cheese Balls (Using Canned Spinach) image

Another way to use canned spinach from Popeye website. Can be frozen after shaping into balls then cover with foil. Freeze to firm and when frozen remove from cookie sheet and store in freezer bag. Do not thaw before baking.

2 (14 ounce) cans chopped spinach, well drained
2 cups herb stuffing mix
1 cup mozzarella cheese, shredded
1/4-1/2 cup parmmesan cheese
1/2 cup margarine or 1/2 cup butter, melted
2 -3 eggs

Steps:

  • mix all ingredients together in large bowl.
  • refrigerate 20 min or till needed.
  • preheat oven to 350.
  • roll chilled mixture into 1 in balls.
  • put on greased cookie sheet.
  • bake 15 minutes.

1 (10 ounce) package frozen chopped spinach, thawed and drained
2 cups finely crushed herb-seasoned dry bread stuffing mix
½ cup grated Parmesan cheese
2 teaspoons garlic powder
½ teaspoon ground black pepper
1 teaspoon Italian seasoning
½ cup melted butter
3 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine spinach, stuffing mix, Parmesan cheese, garlic powder, black pepper, Italian seasoning, melted butter and eggs. Shape into walnut-sized balls and place on a baking sheet.
  • Bake in preheated oven for 20 minutes, or until heated through and browned.

1 package (10 ounces) frozen chopped spinach
2-1/2 cups herb-seasoned stuffing mix
1 medium onion, finely chopped
3 eggs, beaten
1/4 cup grated Parmesan cheese
6 tablespoons butter, melted
1/2 teaspoon garlic salt
1/4 teaspoon pepper

Steps:

  • Cook spinach according to package directions; drain well, squeezing out excess liquid. Combine spinach with remaining ingredients in a large bowl. Shape into 1-in. balls; place on an ungreased baking sheet. Bake at 350° for 10 minutes or until very lightly browned. Balls can be made ahead and refrigerated overnight before baking.
