All-purpose Unbleached Flour (Or Mix of Semolina & All-purpose Flour - See Note Above)
Water

Steps:

  • Make a mound on the counter with the flour and create a well in the center.
  • Add the salt, and slowly start slowly pouring in the water, mixing with your fingers between each addition. (You know you have added enough water when you can bring the flour together in a ball.)
  • Begin to knead the dough until it is smooth. (At this point the dough should resemble stiff bread dough.)
  • Wrap in plastic and let sit 20 minutes before rolling.
  • To roll, take a 6 inch ball of dough and place on a lightly floured surface.
  • Begin to roll into a flat disc, and roll from front to back, turning the dough clockwise about 1/4 turn after every few rolls of the pin.
  • Once the dough is stretched enough to roll around the pin, begin by rolling the dough towards you wrapping it around the pin as you go.
  • Keep the dough well floured to prevent sticking.
  • Once the dough is rolled to a thickness of about 1/8 of an inch it is ready to cut.
  • Ensure the surface of the dough is lightly floured, and start to roll it up into a tube.
  • You can either cut it into fettuccine or into triangular pieces.
  • Place on a floured baking sheet and let dry until you are ready to use it.
  • To cut into triangular pieces, start cutting at an angle, about 1/2 inch wide pieces, starting at the center of the tube end.
  • Continue to cut until complete, and dry as described for the other pasta.
  • To complete the pasta, cook in boiling salted water until al dente.
  • Top with your favorite sauce and serve piping hot.

BASIC PASTA DOUGH (NO EGG)

This recipe yields the equivalent of about 1-1/2 lbs of dry pasta, and can be used to make 4 dozen raviolis.

1 cup warm water
2 tablespoons olive oil

Steps:

  • Put flour in large mixing bowl, making a well in the center.
  • Add wet ingredients to well and very slowly mix together with a fork, incorporating only a little flour at a time so it mixes smoothly and evenly. Trust me, the more patient you are with this the better it will turn out.
  • Continue kneading by hand for about 10 minutes, let rest for a half hour covered with a towel. Repeat a couple times until dough is smooth and silky, and just slightly sticky.
  • Shape by hand or with a machine.
  • Note: Boiling fresh pasta takes significantly less time than dry pasta. Depending on the shape, cook for 30 seconds to 2 minutes.

A simple egg free pasta recipe made with just 3 simple ingredients.

3 cups all-purpose flour
3/4 cup water
2 tablespoons olive oil

Steps:

  • On a large, flat surface place the flour in a mound. Make a well in the center of the flour.
  • In a small bowl, whisk together the water and the olive oil.
  • Slowly add some of the water and mix into the center of the flour. Mix the liquid in the flour with a fork or your hands. Keep adding more water and incorporating the flour until all the flour has been absorbed
  • Once the dough has been formed knead the dough for 5-10 minutes until a smooth dough ball is formed. If the dough is dry, add a little more water.
  • Cover the dough tightly with cling wrap and refrigerate for a minimum of 30 minutes to allow the dough the rest and the gluten to develop.
  • Remove the dough from the fridge and cut into 4 equal pieces. Set aside and cover with a towel to prevent it from drying out.
  • Flour a clean work surface and a rolling pin and roll a ball of dough into a very thin sheet.
  • Fold the dough 3-4 times. Cut the roll of pasta into 1/4 inch thick strips. Dust flour over the strips of dough and unravel. Repeat with the remaining dough.
  • Set cut pasta aside on a tray and leave out at room temperature if cooking fresh or cover and place in the refrigerator to be cooked later.

½ teaspoon salt
½ cup warm water

Steps:

  • In a large bowl, mix flour and salt. Add warm water and stir to make a stiff dough. Increase water if dough seems too dry.
  • Pat the dough into a ball and turn out onto a lightly floured surface. Knead for 10 to 15 minutes. Cover. Let dough rest for 20 minutes.
  • Roll out dough using rolling pin or pasta machine. Work with a 1/4 of the dough at one time. Keep the rest covered, to prevent from drying out. Roll by hand to 1/16 of an inch thick. By machine, stop at the third to last setting.
  • Cut pasta into desired shapes.
  • Cook fresh noodles in boiling salted water for 3 to 5 minutes. Drain.

This adaptable pasta recipe will work with whatever flour you've got in the pantry. Using the "00" gives the silkiest, softest pasta while bread flour will give you more of a satisfying chew, and all-purpose lands you squarely in the middle. Because flour absorbs liquid differently depending on its age and the humidity in the air, consider these amounts as a guide and not as the law. Use your judgment. If the dough seems too wet and sticky to work with, add a bit more flour; if it seems too dry to come together into a smooth, satiny ball, add a bit more oil. The pasta is wonderful cooked right away, but you could dry it for future use instead. Let it hang in strands over the backs of your kitchen chairs or on a washing line if you have one. Or you can curl handfuls of pasta into loose nests and let them dry out on the sheet trays, uncovered.

2 1/4 cups/290 grams all-purpose flour, bread flour or "00" flour, more as needed

Steps:

  • In a food processor, pulse together flour and salt. Add eggs, yolks and oil and run the machine until the dough holds together. If dough looks dry, add another teaspoon olive oil. If dough looks wet, add a little flour until dough is tacky and elastic.
  • Dump dough onto a work surface and knead briefly until very smooth. Wrap in plastic and rest at room temperature for 1 hour or in the fridge overnight. (If pressed for time, the dough can be used after a 30-minute rest; just note that it would be slightly harder to roll out.)
  • Cut the dough into 4 pieces, keeping them covered with plastic wrap or a dish towel when not in use. (If you're rolling the dough out by hand, rather than using a pasta machine, cut it into 2 pieces instead.) Using a pasta roller set to the thickest (widest) setting, roll one piece of dough out into a sheet. Fold the sheet in thirds like a letter and pass it through the machine 2 more times on the same setting.
  • Reduce the setting, and repeat rolling and folding the dough, passing it through the machine 2 or 3 times before going to the next setting. For pappardelle and fettuccine, stop rolling when the dough is about 1 or 2 settings wider than the thinnest one on your roller. For lasagna noodles, and for ravioli and other stuffed or filled pasta, go to the thinnest setting. (To roll dough by hand, see note below.)
  • Shape the pasta. For pappardelle, cut rolled pasta into 1-inch-wide strips. For fettuccine, run the rolled sheets through the fettuccine setting on your roller. Place cut pasta on a flour-dusted sheet tray and cover with a dish towel while rolling and cutting the remaining dough. Make sure to sprinkle flour over the cut pasta before you place another layer on top. If not using immediately, cover the sheet pan with a dish towel to keep the dough supple.
  • Bring a large pot of well-salted water to a boil, add fresh pasta and boil for 1 to 3 minutes, depending on thickness of the pasta. Drain well.

I have not tried it, but I know somebody who swears by it and her husband who has no dietary restrictions agrees. If there is one gf pasta recipe to try, this is it, because as far as I know, there are no commercially made gf wide egg noodles on the market.

1/2 cup cornstarch
3 tablespoons potato starch
3/4 teaspoon salt
4 1/2 teaspoons xanthan gum
3 large eggs (or 4 or 5 egg whites)
1 1/2 tablespoons vegetable oil

Steps:

  • In a medium bowl, combine flours, salt, and xanthan gum.
  • Beat the eggs lightly and add the oil.
  • Pour the egg-oil liquid into the flour mixture and stir.
  • This will feel much like pastry dough.
  • Work the dough into a firm ball.
  • Knead for 1 or two minutes.
  • Place the ball of dough on a potato starch-floured (rice flour turns noodles gray) breadboard and roll as**thin as possible**.
  • This dough is tough and, when almost transparent, will still handle well.
  • Cut into desired shape.
  • For fettuccine and spaghetti, slice very thin strips.
  • For a noodle casserole, make slightly wider noodles.
  • If using for lasagne, cut into 1 1/2-by-4-inch rectangles.
  • To cook pasta: Cook in salted boiling water, to which 1 tablespoon of oil has been added, for about 10 to 12 minutes depending on the thickness and size of your pieces.
  • You will have to test for doneness.
  • Drain and rinse well.

1/2 pound thin spaghetti
6 tablespoons extra virgin olive oil or lard
2 large cloves garlic, lightly smashed and peeled
4 eggs
Freshly ground black pepper
Freshly grated Parmesan or pecorino cheese, optional

Steps:

  • Bring a pot of salted water to the boil. Start the sauce in the next step, and start cooking the pasta when the water boils.
  • Combine garlic and 4 tablespoons of the oil in a small skillet over medium-low heat. Cook the garlic, pressing it into the oil occasionally to release its flavor; it should barely color on both sides. Remove the garlic, and add the remaining oil.
  • Fry the eggs gently in the oil, until the whites are just about set and the yolks still quite runny. Drain the pasta, and toss with the eggs and oil, breaking up the whites as you do. (The eggs will finish cooking in the heat of the pasta.) Season to taste, and serve immediately, with cheese if you like.
