VEGAN WELSH CAKES



Vegan Welsh cakes image

Make a vegan version of Welsh cakes, with all the flavour of the traditional recipe but free from dairy. Sprinkle with sugar to finish and serve warm or cold

225g self-raising flour, plus extra for dusting
¼ tsp fine sea salt
½ tsp nutmeg, grated
100g dairy-free butter
50g caster sugar, plus extra to sprinkle
50g currants
3-4 tbsp dairy-free milk

Steps:

  • Tip the flour into a large bowl and stir through the salt and nutmeg. Add the butter and rub it in with your fingertips to make a fine, breadcrumb consistency. Add the sugar and currants and stir in 3 tbsp milk until it just comes together, add a further 1 tbsp if the dough is a little dry. Bring together into a ball, try not to overwork the dough as this will make it tough.
  • Roll out the dough on a lightly floured surface to a 5mm thickness and cut out rounds using a 6 or 7cm cutter. Re-roll any scraps and cut out more until you have used up all the dough.
  • Place a cast iron pan or heavy based frying pan over a medium heat to get really hot. Cook for 3-4 mins on each side or until lightly golden, you will need to turn the heat down slightly if they begin to catch. Immediately toss in the sugar and set aside on a wire rack to cool down for 15 mins.

500g flour
2 tsp baking powder
raisins or currants to taste
1 tsp mixed spice or cinamon
200g butter
milk to mix

Steps:

  • sieve the flour , baking powder and spices into a bowl. add the butter, broken into small chunks . rub together until it looks like fine breadcrumbs.
  • add the currants and the suger then mix. slowly add the milk until it comes to a lump when you mix it. roll and cut into shape.
  • heat a heavy bottomed frying pan and grease ir. place the welsh cakes in the pan and turn over when it is a nice golden brown.
  • take them out of the pan and sprinkle them with cinamon and sugar.

  • Mix together the soy milk and ground flaxseed - making sure to thoroughly wet the flaxseeds. Set aside to thicken for at least 15 minutes.
  • In a large bowl, rub in the flour, margarine, sugar, baking powder and salt until the mixture resembles fine breadcrumbs. Add the dried fruit and mix to distribute evenly. Finally, gently mix in the flaxseed and soy milk mixture - the goal is to bring everything together as a cohesive dough with the least handling possible. First, stir with a spoon until everything is just wetted, then with lightly floured hands grasp the dough and gently press it together, rotating it and pressing a few times until it forms a ball that doesn't fall apart when handled.
  • Roll out the dough on a lightly floured work surface to roughly 0.75 cm thick. Cut out rounds using a 7 cm cutter, re-rolling and cutting any trimmings until the dough is used up. Generously grease a flat griddle pan or heavy frying pan with margarine, and place over a medium heat. Cook the Welsh cakes in batches, for 2-3 mins each side, until golden brown, crisp and cooked through.

  • In a bowl combine the flour, sugar, baking powder, salt, mace and cinnamon. Mix in the lard and butter using your fingers or a food processor until the mixture resembles coarse crumbs. Add the currants and stir to combine. Add the beaten egg and work it into the mixture adding a little milk as needed until you have a soft dough. It should not be wet or sticky. Wrap the dough and refrigerate for 30 minutes. (Dough can be made well in advance and chilled until ready to use.)
  • Roll the dough out onto a floured or non-stick surface about 1/4 inch thick. Cut out rounds using a biscuit cutter. Gather up the scraps, knead together and roll out again to cut the remaining rounds.
  • Heat and lightly butter a cast iron pan over medium heat (I lightly butter it to later help the sugar adhere to the cakes when they're sprinkled). Add the cakes and cook on each side until lightly browned, about 3-4 minutes (lower the heat if needed to prevent the outside from burning before the interior is done).
  • Let them cool for about a minute. While the Welsh cakes are still warm, place them in a small bowl of sugar to coat all sides. Best eaten while a little warm. Reheat Welsh Cakes in a pan, toaster, or warmed oven (or if in a hurry, in the microwave for a few seconds).
