I make eggs in a mug quite often. It's easy and so versatile you can add pretty much anything that's in your fridge! Try it with ham, swiss and asparagus! Or maybe those cooked frozen sausages cut up with peppers and onions! You can even top it with pizza sauce and pepperoni!

1 tablespoon butter, or as needed
2 eggs
2 tablespoons ricotta cheese
¼ cup diced tomatoes
2 leaves fresh basil
salt and ground black pepper to taste
1 pinch dried oregano
2 teaspoons grated Parmesan cheese, or to taste

Steps:

  • Brush the inside of a microwave-safe mug with butter.
  • Crack eggs into mug and top with ricotta cheese, tomatoes, and basil; season with salt, pepper, and oregano.
  • Cook in the microwave for 1 minute; stir and continue cooking in 15-second intervals, until set, about 1 minute more. Sprinkle Parmesan cheese over eggs.

Steps:

  • Crack your eggs or egg whites in a mug, then break them up by mixing them with a fork. Place a napkin or paper towel over the top of the mug, then cook in the microwave for 1 minute.
  • When you pull your eggs out of the microwave, they'll be in a fluffy "blob". Break them up with a fork to scramble them, then add your desired toppings.
  • Mix once more and you're ready to eat!

kosher salt and pepper

Steps:

  • Spray a large mug with cooking spray (could also use a bowl).
  • Crack 2 eggs into the mug and whisk them with a fork. Season with a little salt and pepper.
  • Microwave for 30 seconds. Give the eggs a light stir. Microwave for another 30 seconds. Stir.
  • Pro Tip: if there is a little liquid left in your egg/mug let it sit for about 30 seconds and the residual heat will cook it up perfectly, without overcooking!
  • Time to eat!

3 large eggs
2 tablespoons milk
2 tablespoons shredded Monterey Jack cheese
2 tablespoons finely diced ham
1 tablespoon finely diced green bell pepper
Pinch kosher salt
Pinch freshly ground black pepper

Steps:

  • Grease the inside of a microwave-safe 12-ounce mug with the butter. Add the eggs and milk, then beat with a fork until well combined.
  • Stir in the cheese, ham, bell pepper, salt and pepper.
  • Microwave on a medium-high setting for 1 1/2 minutes, then stir and microwave until the eggs are set, an additional 1 to 1 1/2 minutes.
  • Let cool slightly before serving.
