EGYPTIAN ROSES
Another recipe I collected for Christmas and can't remember where it came from. Prep time does not include chill time.

Steps:
- Cream together shortening, sugar, eggs and rose water until light and fluffy.
- Sift together dry ingredients and stir until sugar mixture.
- Chill several hours or overnight.
- Preheat oven to 350 degrees.
- Roll dough into walnut-sized balls. Place on greased cookie sheets about 2 inches apart and flatten slightly. Make four cuts from edge to near the center evenly around the cookie. Gently pinch each "petal". Pinch and lift and center of the cookie.
- Sprinkle with colored sugar.
- Bake until 8 to 10 minutes or until lightly browned on the bottom.

EGYPTIAN ROSE LEAVES
These make a lovely cookie for Valentine's Day. NOTE: Rose water is not strong enough flavoring. Be sure to use rose fluid, available from many drugstores. You can use rose water, but you will have to double the amount.

Steps:
- Mix shortening, sugar, eggs and rose fluid until fluffy. Stir flour and salt together, then mix in butter mixture. Dough will be soft. Chill several hours or overnight.
- Preheat oven to 350 degrees F (175 degrees C) Light grease or line baking sheets with parchment paper.
- Using 1/3 of dough at time (keep rest of dough refrigerated) roll into balls about 3/4 inch in diameter. Place on cookie sheets. Flatten with hand until approximately half of their original thickness. Imagine the flattened cookie to be a clock. Make 2 slits, each 1/2 inch long, in cookie at 10:00 and at 2:00. Pinch bottom to form "base" of petal. Sprinkle with red or pink decorator's sugar.
- Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes or until lightly browned on bottom. Do not brown tops of cookies!

- Ful Medames. The most popular street food snack in Egypt, Ful is a paste of mashed broad (fava) beans flavored with garlic and olive oil. It is labeled out of large copper pots, often into pockets of pitta bread and typically sold as an inexpensive takeaway sandwich.
- Tamiya. Another Egyptian street food staple, known elsewhere as falafel, Tamiya is made with mashed fava beans and parsley (instead of chickpeas, which are used elsewhere around the Mediterranean).
- Koshari. One of the famous Egyptian dishes, A mix of rice, brown lentils and macaroni topped with fried onions and a spicy tomato sauce, koshari is normally eaten in dedicated koshari restaurants that serve the dish exclusively.
- Shawarma. Shawarma one of the tasty Egyptian dishes, it is a large cone of pressed lamb or chicken that is rotated vertically in front of a flame grill.
- Kebab and Kofta. Flame-grilled chunks of lamb (kebab) and spiced minced meat made into a sausage and grilled on a skewer (kofta) are a favorite Egyptian food meal.
- Mulukhiyah. It is one of the favorite dishes of Egyptians, Hard to like on the first encounter, this is a soup made from mallow leaves. Green in color, it has a thick, viscous texture.
- Pigeon. A traditional delicacy food, pigeons (Hamaam) are bred throughout Egypt in conical pigeon towers. They are stuffed with seasoned rice or, even better, bulgur wheat (freek) before being grilled or baked.
- Egyptian Desserts. Egyptian desserts are quite light. Mahalabiya is a delicate rosewater-flavored ground rice dessert, topped with toasted nuts and cinnamon.
- Baklava. Egyptians are big fans of the sticky for this kind of food, syrup-drenched, nut-filled filo pastries known collectively as baklava. There are numerous different kinds such as konafa, which has a cream base and a crunchy vermicelli pastry crust and Basbousa, made of semolina pastry soaked in honey and topped with hazelnuts.
- Feteer Meshaltet. One of the traditional old food, Fiteer is a light, flaky multilayered bread made from dough stretched paper-thin and folded several times.

- Egyptian Meshabek ( Jalebi ) This kind of sweet is found everywhere, not just in big shops of sweets but mainly along the streets, you will find street salesmen offering this sweet.
- Zalabia or Lockmet el-Qady. I’d say it’s a kind of doughnuts, just looking like small balls and traditionally in sugar syrup. You can easily do it at home from flour, yeast and some other ingredients.
- Mahalabiya ( Egyptian Milk custard ) It is a genius kind of dessert made from 3 ingredients! All that you need to do this very popular dessert is milk, corn starch and sugar!
- Goulash. It is a very interesting Egyptian dessert made of a special kind of very thin dough. It’s sold in most of big supermarkets so not a big problem to find the layers.
